Our mom got this delicious recipe years ago at a church dinner. These potato balls are perfect as a side dish, or as an appetizer for the big game.
I made them for our super bowl party this year, because they are the perfect finger food, and they were devoured within minutes. They were so tasty.
They are filled with buttery mashed potatoes and melted cheese. Your picky eaters will devour these. They are so simple to throw together and make the perfect appetizer or finger food.
We also have them as a side dish some nights, because they are quick, and I usually have the ingredients on hand. If you need a quick appetizer, snack, or side dish, this is a recipe I definitely recommend.
could i bake these?
I have only fried them, which I highly recommend. It may not be the most healthy option, but they sure are delicious, and I think it’s okay to do every now and then.
If you bake them, they will probably fall apart and have a hard time staying in their ball form. They may also not be as crunchy.
would any potato work for this recipe?
For this recipe, we used russet potatoes, however, really any potato would work for this recipe. I have never made it using sweet potatoes because I usually use russet potatoes and I don’t know how the cheesy and sweet combination would pair.
I have made this recipe using red potatoes and it was absolutely scrumptious. You can also peel the potatoes, or keep the skin on. I like the texture of the skin, so I usually keep it on.
You could also use golden yukon potatoes. Really any potato would work great for this recipe. If you have a favorite potato, try it. It’s hard to mess this recipe up, so any type of potato would be delicious.

Cheesy Potato Balls Recipe
Ingredients
- 6 medium russet potatoes
- ¼ cup butter
- 2 egg yolks save the egg whites
- ½ cup milk
- 2 teaspoons onion chopped very fine
- salt and pepper, to taste
- 3 ounces mild cheddar cheese cut into small cubes about 3/4 inch
- 4 ounces saltine crackers 1 package, crushed fine
- 3 beaten egg whites use egg whites from above plus one more egg white
- vegetable oil for frying
Instructions
- Wash potatoes and pierce with a fork, then boil half an hour with skins on until fork tender.
- Peel and mash the potatoes.
- In a sauce pan mix together butter, beaten egg yolks, milk, onion and salt and pepper. Cook until well blended and then mix into the mashed potatoes and mash together well.
- We hands and form into balls with a cheese cube in the center. Pack potatoes around the cheese.
- Dip the balls into beaten egg whites and then roll into the saltine cracker crumbs.
- Drop into the hot vegetable oil and cook until golden brown.
- Refrigerate for 12 to 24 hours and then bake in a 200 degree oven for 1 hours
