I’m not sure what it is lately, but nothing tastes better than homemade fried rice. We’ve been trying all kinds of varieties and decided to branch out to cauliflower rice.
It turned out amazing and calories and carbs saved by using cauliflower are incredible. This makes a perfect side for all of your favorite Asian dishes, or a great meal after adding in some shredded chicken.
how to make cauliflower fried rice:
Step 1: In a large skillet, heat sesame oil over medium heat. You could use other oil, but for the best taste, we highly recommend using sesame oil.
Step 2: Add onion, garlic, peas and carrots, and cauliflower rice to skillet and cook until all vegetables are cooked through and tender. This will roughly take about 7-8 minutes.
Just be sure to rotate and watch it carefully.
Step 3: Crack eggs into pan and scramble into vegetables.
Step 4: Add soy sauce to the pan and stir until combined.
Step 5: Top with more soy sauce if desired.
recipe shortcuts
If you are anything like me, dinner is never the first priority. I am always on the go and dinner sometimes falls on the back burner.
If I can find a recipe shortcut, I’ll use it. I found a few for this recipe that might be helpful. Love one busy mom to another.
-Purchase your cauliflower already chopped. If you are having to spend time blending or thinly chopping your cauliflower, you are doing it wrong.
You can now buy diced and chopped cauliflower at almost any grocery store.
-Chopped broccoli is a little more difficult to find, but if I can find it off the stem, I buy it. I hate cutting broccoli off the stem. It just gets so messy. Just me? You could also buy the microwavable steam bags of broccoli.
They may be a little less crisp in the cauliflower rice, but if you are in a big time crunch, it would be okay.
what to serve with your fried cauliflower rice
I love eating this with a chicken, steak, or shrimp dish. I add a little teriyaki sauce to some grilled meat and serve it with some Fried Cauliflower Rice for a delicious and filling meal.
You could also just eat it plain if you are looking for a lighter lunch.
My kids love when I buy egg rolls or pot stickers at the store and we eat them with this Fried Cauliflower Rice. It is one of our go to meals on busy nights.
