Cauliflower Fried Rice

I’m not sure what it is lately, but nothing tastes better than homemade fried rice! We’ve been trying all kinds of varieties and decided to branch out to cauliflower rice. It turned out amazing and calories and carbs saved by using cauliflower are incredible. This makes a perfect side for all of your favorite Asian dishes, or a great meal after adding in some shredded chicken!

  • 3 Tablespoons sesame oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups peas and carrots, frozen
  • 2 1/2 cups cauliflower rice
  • 2 eggs
  • 1/4 cup soy sauce


  1. In a large skillet, heat sesame oil over medium heat.
  2. Add onion, garlic, peas and carrots, and cauliflower rice to skillet and cook until all vegetables are cooked through and tender (about 7-8 minutes).
  3. Crack eggs into pan and scramble into vegetables.
  4. Add soy sauce to the pan and stir until combined.
  5. Top with more soy sauce if desired.
