Breakfast Tacos

I love nothing more than waking up and eating a delicious breakfast! I tend to need something  a little more filling in the summer since we are usually on the go and playing outside all day long! These Breakfast Tacos are delicious for breakfast, lunch OR dinner and can be easily thrown together with any of your favorite ingredients!

  • 4 red potatoes
  • 1 green pepper
  • 1 Tablespoon extra virgin olive oil
  • 4 eggs
  • 4-6 strips of cooked bacon
  • 1 Tablespoon of milk
  • 1 cup cheddar cheese
  • 1 cup re-fried beans
  • salt and pepper to taste
  • 8 taco sized corn or flour tortillas


  1. Dice potatoes and pepper
  2. In a skillet over medium heat, cook the diced potatoes and peppers in the vegetable oil until completely cooked through and potatoes are soft.
  3. In a separate pan whisk together milk and eggs and scramble them in pan until done.
  4. Spread re-friend beans in center of each tortilla.
  5. Top with eggs, potatoes and peppers, cheese, and bacon.
  6. Fold tortillas in half forming tacos. Best if served warm, immediately or store in airtight container in refrigerator for up to 2 days.
