Slow Cooker Beef and Sweet Potato Stew

Our Slow Cooker Beef Stew is a favorite winter dish. We’ve kicked up this stew and added more veggies.  The sweet potatoes take this stew over the top! The kids loved this and asked for seconds!

Ingredients

  • 1 1/2 pounds stew meat (cut into one-inch pieces)
  • 1/4 cup flour
  • 1/2 onion (diced)
  • 1/2 Tablespoon minced garlic
  • 2 sweet potatoes (peeled and cubed)
  • 5 baby golden potatoes (cubed)
  • 3 carrots (sliced)
  • 1 red bell pepper (diced)
  • 1 (14 ounce) can beef broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon crushed beef bouillon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 stalks celery (sliced)
  • 1/2 teaspoon paprika
  • 1 teaspoon parsley

Instructions

  1. Place the meat and flour in the slow cooker. Toss the meat to coat completely. Then add in the remaining ingredients.
  2. Cover and cook on high 4-6 hours.
  3. Garnish with parsley before serving.
