- In a medium bowl, mix the pineapple juice, vegetable oil, soy sauce, brown sugar, garlic powder, and pepper. Place chicken in the bowl, and coat with the mixture. Cover with homemade Hawaiian teriyaki sauce, and marinate in the fridge for at least 2 hours (I like mine to marinate for about 8 hours).
- Heat grill to medium-high. Place chicken on grill until just cooked through (about 5-7 minutes per side) and an internal temperature of the chicken is 160 degrees F.
- Place pineapple rings slices on grill and cook until grill marks appear (just a minute or two per side).
- Remove cooked chicken and pineapple from grill and place one slice of pineapple on each chicken breast. Sprinkle green onions on top.
Important Recipe Notes
When we make this great meal, we love to use skinless chicken breasts, but you can always use skinless chicken thighs, chicken wings. Or make this into chicken skewers and then spear the chicken and pineapple chunks with the bamboo skewers and then just place them on the hot grill for another way to enjoy this delicious recipe.
How to Store Leftover Chicken
If you have any of this family favorite leftover, place it in an airtight container and store it in the fridge for up to 4-5 days for the next time you need a simple dinner during the week.
