One of my husband’s favorite desserts of all time are our Thin Mint Truffles. If I “accidentally” spend too much on a pair of winter boots, those truffles can help him to forgive me a little more quickly. 😉 They are pretty much magical.
I found myself in a similar predicament earlier this week with my husband (there was a good sale on kids’ clothes at Baby Gap!) and I discovered that there were no thin mint cookies to be found in my house. I did, however, have some store-brand lemon sandwich cookies. I thought about it for a minute and decided that it was worth a shot . . . which ended up being the best decision I made all day!
Three ingredients, no baking required, and a husband who has forgiven me once again for my shopping addiction . . . this is the best dessert ever.
I know that in the past we have had a couple people ask the best way to dip the truffles – I just place the cookie ball in the melted chocolate and roll it around with a spoon until it’s completely coated. I then lift truffle from chocolate using 2 forks (this will allow excess chocolate to run off) before placing on wax paper/aluminum foil.
