Healthy Meals Monday: Cafe Rio Slow Cooker Chicken and Cilantro Rice

Our Cafe Rio copycat recipe for slow cooker chicken and cilantro rice tastes just like the real deal. It's healthy, simple, and delicious.

Out West they have a Fresh Mexican Restaurant called Cafe Rio and it was my favorite place to go.
My two year old had a birthday so we invited some friends over for a Cafe Rio dinner. It was so delicious and it worked out perfect for a group.

If you are ever out west, or in Utah, we highly recommend stopping in. You will be blown away by the flavor and the freshness. It tastes so good, and it’s nice knowing exactly what is going into your food, as you watch them prepare it.
Even kids love this place. It’s so easy to make and full of flavor. You need this recipe in your life.
It’s okay if your chicken isn’t completely submerged in the liquid, once it cooks, it will be. My chicken breasts were frozen. If you are using thawed, they will need about half the cooking time.
I like to shred my chicken using a hand mixer. It makes the process go by fast, and doesn’t burn your hands, if the chicken is still really warm.
This Cilantro rice is out of this world tasty, and so easy to make. We used brown rice but you could also use white, long grain, or Jasmine.

what toppings would be good on this:

I love my toppings. I love this recipe as is, but I love it even more with toppings, because they really give it a lot of amazing flavor. Here are a few toppings I highly recommend:

  • Olives
  • Banana Peppers
  • Red Onions
  • Lettuce
  • Refried Beans
  • Spanish Rice
  • Black Beans
  • Sour Cream (or plain Greek yogurt)
  • Guacamole
  • Avocado
  • Jalapeños
  • Tomatoes
  • Bell Peppers
You could serve this chicken over tortillas, salad, nachos, or anything really. It’s so easy to make and tastes delicious. I can’t say enough, how yummy this recipe is.

Healthy Meals Monday: Cafe Rio Slow Cooker Chicken and Cilantro Rice

  • Chicken
  • 8 oz (light or fat free) Italian dressing - about half a bottle
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 3lbs frozen chicken breasts
  • Rice
  • 2 cups uncooked brown rice
  • 2 cups chopped cilantro
  • 1 cup salsa verde (green salsa)
  • 1 bunch green onions
  • 4 cups of water
  • A pinch of salt


  1. Mix cumin, chili powder & dressing in bowl
  2. Place frozen chicken breasts in crock pot
  3. Pour mixture over chicken & cover
  4. Cook on high for 5 hrs or on low for 7 to 8. Shred chicken in the crockpot and mix it well.
  5. Wash and chop the cilantro. Mix the cilantro with 2 cups of water and pour in the pan for cooking the rice. Add two more cups of water, the salt, Salsa Verde, and onion. Bring to a boil. Stir in the rice in the boiling water. Cover and turn down heat to very low; steam for 30 minutes. Makes about 10 servings.
  6. Put it all together with Toppings:
  7. Cook whole wheat burrito tortillas on non-greased skillet 10-15 seconds on each side
  8. Put Chicken, Cilantro Rice, black beans, avocado, lowfat cheese, cilantro, tomatoes, (I also added red pepper, green onions and spinach) inside of tortilla.
  9. Add anything else you like (fat free sour cream, salsa, etc.)
  10. Roll up your tortilla and eat your delicious and healthy Cafe Rio Burrito!

    Love love love this site! Will look more at the allergen friendly site too... when my 2yr old isn't trying to grab the keyboard... lol This looks amazing! I'd love your salsa verde recipe... if you have one! We've only had Costa Vida - I love love love their green enchilada sauce... I love that you made the cilantro lime rice w/brown rice!!! Keep up the great work - what a fun thing to do with your sisters!!!
