Frequently Asked Questions About Making the Crispiest Chicken Wings:
A few things could have gone wrong when making crispy baked wings.
Did you pat the chicken dry before adding the seasonings? Leaving moisture on the chicken makes it harder to get that crispy chicken skin.
Did you skip the baking powder? The baking powder helps dry out the skin and is perfect for getting crispy oven chicken wings.
Did you overcrowd the tray? Make sure the chicken is added in a single layer to allow enough air flow between the wings for this crispy baked chicken wings recipe.
You can do different ways. When you cook wings this way (using just a dry spice rub) you can start with just the dry rub and add your favorite sauce after they have cooked and then place them back in the oven for a few more minutes.
Since the goal of this chicken wing recipe is to get the skin crisp, you will not want to cover the chicken wings. When you cover the wings you will trap in the moisture.
To get the best wings, bake uncovered to allow hot air to fry the chicken when it mixes with the oil added to the chicken.
You can use frozen wings for this recipe, however, you will want to allow them time to thaw since it is easier to remove the wing tips when thawed.
Expert Tips:
- The baking powder will help your wings brown nicely and improve crispness. Always use aluminum-free baking powder.
- For extra crispy wings, bake the wings on a wire rack. Line your baking sheet with parchment paper and place a wire rack on top of it. Add the wings onto the wire rack and bake, flipping them halfway through baking.
- Smoked paprika, chili powder, or cayenne pepper are good options to add to your wings. Do not use more than ½ of a teaspoon.
Make Ahead & Storage Instructions:
Fridge: Put the leftover chicken wings in an airtight container and keep in the fridge for 3-4 days.
Make ahead: For the best way to prepare for this recipe, simply combine the seasonings and prep the chicken by cutting off the excess wing tips. Then combine the rest before cooking.

You mentioned several times about using baking powder, but NOWHERE do you say when or how to apply it? Is it supposed to be mixed in with the seasoning rub? I’m confused. Please advise. Thanks.

These would be yummy in the air fryer! Air Fry at 400˚F for 8 minutes, then shake the basket to flip and air fry for another 8 minutes. They should be crispy and golden brown when ready.
OMG I can’t believe how many people don’t know how to read a recipe???? It tells you what to mix in the bowl with the olive oil! BAKING POWDER is the first one!!! I’m glad Bobbi answered twice!! Hopefully you people out there who couldn’t read realized when the Baking powder goes in?!?!?!? These are delicious and crispy due to the baking powder so don’t leave it out!!!!
I love this recipe
For those asking when and where to add baking powder please look at step #1. It’s added with the other ingredients. Enjoy It’s a nice easy recipe.
Followed recipe to the letter. These wings have little, to no flavor. Disappointed.
This is a pretty good recipe. They tasted like the restaurant kind. I loved the look of the chicken wings when they came out in the oven. I plan to use it again to make lots of them for Super Bowl Sunday & add hot sauce to a portion of them, using your suggestion for sauce addition.
We loved these wings! Crispy and flavourful!
Did them in the convection oven. So good!
