I think that I am suffering from a little bit of a “Holiday Hangover”. I just don’t feel like putting much effort into my dinners right now.
I had some leftover grilled chicken and found this quick and easy recipe over at $5 Dinners. I was so happy that there was so little work on my part, but it was a yummy meal my whole family loved.
So if you are looking for a quick and easy dinner (or even lunch), this is perfect.
It is the perfect dinner for those crazy nights, where you feel like you have no food in the fridge, and no time to prepare dinner. This recipe only requires a few simple ingredients and is full of flavor.
My picky eaters love this dish (as well as my husband) so it is a wife and mom win, every time.

what could i replace the french bread with?

For this recipe, we call for french bread, however, it could easily be swapped out for something else.

We highly recommend trying the french bread because it is delicious with all these flavors and the bread is so soft, with the perfect amount of crispiness.

However, if you are looking to replace the french bread, here is what we recommend trying:

  • Tostada Shells
  • Hard Taco Shells
  • Soft Tortillas
  • Tortilla Chips
  • Texas Toast
  • Naan Bread
  • Pita Bread

could taco seasoning replace the fajita seasoning?

For this recipe, we call for fajita seasoning mix, but you could easily use taco seasoning mix instead. It has an extremely similar flavor and would definitely work just as well.

I am all about toppings. They just give your food that extra little burst of flavor. Here are a few toppings I recommend for these melts:

  • 1 loaf French bread, sliced in half
  • 2 grilled chicken breasts, cut into slices (you can also buy pre-cooked grilled chicken slices!)
  • 1 teaspoon fajita seasoning
  • 1 green pepper, sliced
  • 1 onion, sliced (you could also use a bag of frozen peppers and onions)
  • 1/3 cup salsa (more or less depending on how much you like)
  • 4 slices of your favorite cheese (I like Cheddar or Mozzarella)


  1. Slice the bread open lengthwise so you have two long pieces.
  2. Season the chicken breasts with the fajita seasoning (or taco seasoning) and grill on both sides until cooked through.
  3. Let cool slightly, then slice into thin strips. (If you are using pre-cooked chicken strips, just warm them up. You don't even need to season them with fajita seasoning if you don't want to)
  4. Saute the peppers and onions with some fajita seasoning for about 3-5 minutes, or until the water has cooked off.
  5. To assemble, spread the salsa on the bottom of the bread.
  6. Add the grilled chicken slices, then the sauteed peppers and onion, then the cheese slice.
  7. Microwave or put under the broiler to melt the cheese.
  8. Cut bread into slices and serve.
