Peanut Butter Butterfinger Cookies Recipe
These chewy and delicious cookies can be made with Truvia or regular sugar.
Serving
Ingredients
- ½ cup butter, softened
- ½ cup peanut butter (creamy)
- ¾ cup Truvia Baking Blend
- ½ cup light brown sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 egg
- 1 teaspoon vanilla
- 1 ¼ cups flour
- 4 (1.9 ounce) Butterfinger Candy Bars, crushed
Equipment
Instructions
- Preheat oven to 375 degrees.
- Beat butter and peanut butter for 30 seconds. Add Truvia® Baking Blend, brown sugar, baking soda and baking powder. Beat until combined.
- Beat in egg and vanilla until combined. Stir in flour. Fold in crushed Butterfinger pieces.
- Roll into 1-inch balls and place on an ungreased cookie sheet.
- Bake for 7-9 minutes, or until golden brown.
Notes
You can also substitute 1 1/2 cups sugar in place of the Truvia baking blend.

These look so good!! A quick question though….in the recipe you say to use 3/4 c. Truvia blend or 1/2 c. sugar, but then afterward you said, “convert any recipe by using half as much baking blend as you would sugar”. Should the recipe have said 1/4 c. Truvia? Or maybe I’m missing something? Either way, I’ll be making these for sure! =)

I had to go back through it says 1 1/2 c. of sugar if you wanted to substitute 🙂 I am making these right now.
if I use regular sugar how much it will be
1 1/2 cups regular granulated sugar.

I just made these following the recipe, but using regular sugar. They came out flatter than pancakes, no puff at all, and not very appealing looking. Where might I have gone wrong?
Not sure what could have gone wrong. Butter can only be softened, not melted. Other than that, we have no idea. We have not had a problem with them. Sorry it didn’t work out.
