We took one of our favorite flavors and turned it into a No Bake Biscoff Bar! Using the same concept from one of our most popular desserts, No Bake Peanut Butter Bars, we tweaked the recipe to make it Biscoff friendly.
As a family who adores Biscoff cookies (it will never not make us think of flying on an airplane) and who will eat cookie butter straight out of the jar (guilty!) this recipe was a recipe a long time in the making. Whether you like the traditional biscoff spread or would rather use Cookie Butter from Trader Joes or Speculoos from your favorite specialty store, if you love that flavor – you’re going to LOVE this easy no-bake biscoff dessert.

Ingredient Notes and Substitutions:
You only need 5 basic ingredients to make this recipe, but you can tweak and adjust it to make it your own.
- Butter: 1 cup, melted. We like to use unsalted butter (the biscoff cookies have plenty), but whatever you have on hand will work.
- Biscoff cookie crumbs: You’ll need two cups of fine biscoff cookie crumbs. I use a high-power blender or food processor to get small, even crumbs. One 8.8 ounce package was just about two cups.
- Powdered sugar: 1 ¾ cups confectioners sugar. While you can use any brand, we prefer C&H. This sweetens it up and adds thickness to the mixture. You can decrease the amount of sugar slightly, but it may impact the texture of the bars. If you don’t have enough, the bottom may not set up all the way, either.
- Biscoff spread: 1 ¼ cups creamy Biscoff spread. You can also substitute this for Speculoos or cookie butter.
- White chocolate chips: the white chocolate paired with the biscoff is one of our favorite flavor pairings. You’ll need 1 ½ cups. If you’re not a white chocolate fan, you can sub these out for regular milk or semi sweet chocolate, or even use butterscotch chips, too.

How to Make This Simple No Bake Dessert
- Make the bottom layer. After making biscoff cookies crumbs, place them in a mixing bowl with powdered sugar and 1 cup biscoff spread until fully combined. You can use a mixer or just a spatula.
- Press into a pan. In a greased pan, press the mixture, making sure it covers the full area. I prefer the thickness and size of making these bars in a 8×11” pan. If you don’t have one, or want to make the bars thicker or thinner, you can use a 9×9” pan for thicker bars or 9×13” pan for thinner bars.
- Top with chocolate chips. Melt the white chocolate chips and the remaining ¼ cup biscoff spread in 30 second intervals, stirring in between each until smooth. Pour it over the biscoff layer and let it set up, either in the fridge or on your countertop.
- Cut into squares and serve.

Frequently Asked Questions and Troubleshooting Tips
I typically make these in an 8×11” pan, and cut them into 20 small squares (they are very rich). However, if you prefer a thinner bar, you can make them in a 9×13” pan. If you prefer them a little thicker, you can make them in a 9×9” or 8×8” pan. They take slightly longer to set up if they are thicker.
You can use crunchy cookie butter, just know that you may need to adjust the amount of powdered sugar so that the bottom sets up without crumbling apart.
Yes! You can swap out the white chocolate chips for any flavor you like. Butterscotch chips or regular chocolate chips would also be delicious.
Want to know our secret to getting a clean cut? Use a plastic knife! This helps it cut seamlessly through the dessert without sticking to the knife. If you don’t have a plastic knife, you can use a regular knife. However, we would recommend running it under warm water before cutting and wiping off the knife in between each cut.

No Bake Biscoff Bars Recipe
Ingredients
- 1 cup butter, melted
- 2 cups Biscoff cookie crumbs*
- 1 ¾ cup powdered sugar
- 1 ¼ cups creamy Biscoff spread
- 1 ½ cups white chocolate chips
Equipment
- Baking Dish (9 Inch Square), (you can also use a 9×13)
Instructions
- In a medium bowl, mix together the melted butter, Biscoff crumbs, powdered sugar, and 1 cup Biscoff spread until well blended.
- Press evenly into the bottom of an ungreased 8×11” pan**
- In the microwave, melt the white chocolate chips with the remaining ¼ cup biscoff spread, stirring every 30 seconds until melted until smooth. Spread over the biscoff layer.
- Refrigerate for at least one hour before cutting into squares.
