This recipe is so easy, and it tastes amazing! It is done in a matter of minutes, and it looks and tastes great! These Loaded Egg Peppers are fast, delicious, and healthy! Definitely the perfect way to start off the morning!
Ingredients
- 4 eggs
- 1 red Bell pepper (you could use any bell pepper)
- About 1/2 cup spinach (chopped)
- 2 tablespoons feta cheese
- 8 Cherry tomatoes (chopped)
- Pinch of salt and black pepper
Instructions
- Heat stove to medium-high temperature.
- Chop the Red pepper into about 1 centimeter thick slices.
- Clean out the seeds and middle so it's just the pepper edges.
- Place the peppers on a non-stick pan (or griddle).
- Crack the egg over the bell pepper.
- Sprinkle desired amount of spinach, feta cheese, cherry tomatoes, salt and pepper, over the egg in the pepper outline.
- Let cook for about 2 more minutes, or until desired egg texture.
