Healthy Pesto Grilled Cheese Recipe
- 2 teaspoons pesto sauce
- 2 Tablespoons light mayonnaise
- 6 slices whole wheat bread
- 6 slices mozzarella cheese
- 2 avocados pit removed and sliced
- 1½ cups baby spinach leaves
- Spray frying pan or griddle with non stick cooking spray and preheat to medium temperature.
- In a bowl, mix together pesto and mayo.
- Spread pesto mixture onto 3 slices of bread.
- Top three slices of bread with cheese, sliced avocado, and spinach.
- Top each sandwich with remaining three slices of bread, and place onto griddle/pan.
- Let cook for about 3 minutes or until cheese begins to melt and bread turns golden, flip sandwich and repeat on same side.
