Healthy Meals Monday: Chicken Lime Soft Tacos

These Chicken Lime Soft Tacos make the perfect dinner. They are so easy to make, healthy, and come together in minutes. The best part is, even my pickiest eaters love them.

I don’t know about you.. but I have had a LOT of treats during this holiday season. It really feels good to eat something healthy. This is one of my favorites.
If you want to change it up a bit sometimes we use halibut instead of chicken. It is DELICIOUS. I am usually not a fish person, but put it in a taco, and you’ve got me.
These would also be delicious with shrimp or salmon. I personally stick to chicken because my kids gobble these up, and the flavors pair best with chicken. However, really any meat would work with these tacos.

what could i top these tacos with?

If you are anything like me, it is all about the toppings and delicious additions.

Toppings are also the perfect way to sneak in vegetables to your kids diets. If you chop them small enough, they will never know. I have also found if they help me pick them out and cut them (with supervision) they are more likely to eat the food they chose and prepared.

Here are my favorite taco toppings that would taste amazing on these Chicken Lime Soft Tacos:

-Shredded Lettuce
-Corn (fresh, canned, or frozen would all work)
-Red Bell Peppers
-Green Bell Peppers
-Banana Peppers
-Mexican Cheese
-Feta Cheese
-Red Onion
-Pico De Gallo
-Guacamole or Avocado slices (I wouldn’t even judge you if you did both)
-Sour Cream (plain Greek yogurt is a great substitute for sour cream)
-Hot Sauce

Healthy Meals Monday: Chicken Lime Soft Tacos

  • 1 ½ lbs. boneless, skinless chicken breasts, cut into chunks or strips
  • ¼ c. red wine vinegar
  • 1 lime, juiced
  • 2 t. sugar
  • 1 t. salt
  • 1 t. ground black pepper
  • 2 green onions, minced
  • 2 cloves garlic, minced
  • ¼ - ½ c. fresh cilantro, chopped (more or less to taste)
  • 4 tortillas


  1. Sauté chicken over medium high heat until browned.
  2. Add vinegar, lime juice, sugar, salt, pepper, green onion, and garlic.
  3. Simmer for 10 minutes or until chicken is cooked thoroughly.
  4. Add cilantro and simmer for an additional 30 seconds.
  5. Serve on warmed tortillas with desired toppings.

  1. @Amy Lee- Red Wine Vinegar is available at any grocery store and it's super inexpensive! It also has great flavor! Aceto bacter bacteria actually transforms the alcohol in the vinegar into acetic acid, but if you still want to substitute something else, you can use an apple cider vinegar or distilled vinegar. Both of those would work just fine.
