What other fruit could I use besides raspberries?
I am the biggest raspberry fan. Next to fresh peaches, they are definitely my favorite.
I get that not everyone loves raspberries as much as I do (actually I don’t really get it…), so if this is the case, here are a few other fruits that would taste amazing with this recipe:
- Blueberries
- Blackberries
- Strawberries
- Cherries
- Pineapple
These are the ones we definitely recommend for this recipe. You could also just do plain lemon, and not add any raspberries or any other fruit to it, if you prefer it plain.
Do I have to use diet 7 up?
You definitely don’t have to use Diet 7 Up for this recipe. I like it sugar free and light, so I fell less guilty, but you could easily switch out the diet, for regular.

Diet Lemon Raspberry Cake Recipe
Ingredients
- 15.25 ounces lemon cake mix
- 2 egg white
- 1 ¼ cups Diet 7-up, or Sprite Zero
- 2 cups fresh raspberries, divided
Equipment
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine cake mix, egg whites and diet soda. Fold in 1 cup raspberries.
- Pour batter into a greased 9x13 inch baking pan. Bake for 30 minutes.
- Top with light Cool Whip and garnish with raspberries.

This looks so good I couldn’t wait to try it. So I just put it in the oven. I made a few adjustments – using egg white powder instead of eggs because I just can’t stand to waste yolks, using FD Raspberries and regular 7Up, not diet. Will be sharing on my blog next week. It’s for dinner with friends tomorrow so I have to wait to taste it 🙁

Raspberries not plentiful in MS. I’m thinking of using blueberries Any thoughts?
Not a fan of cool whip or any whipped cream, a light drizzle of lemon flavored icing put the finishing touch on it for me.
