Avocado Chicken Salad Sandwich Recipe
A tasty and healthy sandwich that is so delicious!
Ingredients
- 2 boneless skinless chicken breasts cooked and shredded
- 1 avocado diced
- ¼ cup cilantro chopped
- salt and pepper to taste
- 4 ciabatta rolls
Instructions
- In a medium mixing bowl combine the shredded chicken, diced avocado, cilantro, and salt and pepper to taste.
- Stir together well. The avocado will mash up a little and that is fine.
- Serve on Ciabatta rolls.

I've made this recipe many times - it's my new favorite thing to do when I have leftover chicken. I've even served it on crackers as an appetizer/snack. The only thing I've done differently from the recipe as given above is to add some finely minced or grated onion, a splash of lime juice and occasionally some hot sauce or cayenne.

This is so good! Thank you for sharing. I do not think I can ever use mayo in my chicken salad again. This is insanely good and I only added tomatoes and baby kale for lettuce.

There are no instructions with this recipe...? My guess was you just mash it all together. Tasty alternative to a chicken salad sandwich.
