I needed to make a treat to feed a crowd and had all the ingredients on hand to make these Sheet Pan funfetti cookie bars.
I don’t know if there is any tastier flavor than “funfetti. “They turned out perfectly!
Ingredients for this recipe:
- 1 cup butter (softened to room temperature)
- 1 1/2 cups brown sugar
- 2 large eggs
- 1 Tablespoon vanilla
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups flour
- 2 cups white chocolate chips
- 1 cup sprinkles

For this recipe, you only need a few simple kitchen tools. We recommend using the following equipment:


How to make these Sheet Pan Funfetti Bars:
- Preheat oven to 350℉.
- In a large mixing bowl, cream together softened butter and brown sugar.
- Mix in eggs and vanilla.
- Add baking powder, salt and flour and mix until well combined.
- Fold in white chocolate chips and sprinkles, reserving some of them to sprinkle on top before baking.
- Spray a half baking sheet (18 x 13 inch) with nonstick cooking spray, spread dough out evenly and top with remaining sprinkles.
- Bake for 20-25 minutes, or until middle is set and edges are golden brown.
- Let cool and cut into squares.
Storage Suggestions
If you manage to have any leftover Bars + Brownies, these can store well if prepped appropriately. Once they have cooled completely, here is how you can store it:
- Counter: Store bars and brownies in an airtight container at room temperature for up to 4 days. If your kitchen is particularly warm, consider refrigerating instead to prevent them from getting too soft or melty.
- Refrigerator: Place in an airtight container and refrigerate for up to 1 week. Let them come to room temperature before serving for the best texture and flavor.
- Freezer: To freeze, make sure bars and brownies are completely cooled and unfrosted. Wrap tightly in plastic wrap (or Press & Seal) and then place in a freezer-safe bag or container. For easier portioning, wrap individual squares before freezing. Don’t forget to label with the date. They’ll stay fresh in the freezer for up to 3 months.

Can I use self rising flour and cut out the baking powder, salt?
We have not made these with self rising flour. You would have to go by other similar recipes you have substituted the flour with.
Do these freeze well?
These bars freezer great in an airtight freezer container.
I had an awful time spreading this across the entire half sheet. I also didn’t know if the sugar should be packed or not.
Hi Caroline- sorry you ran into troubles spreading this! We typically use packed brown sugar.
Are you able to use regular sugar instead of brown sugar in this recipe?
Yes, you can use white sugar instead of brown sugar, but the texture and flavor will change. The bars will be crispier and less chewy, with a lighter, less complex flavor.
Can I use milk or semi-sweet chocolate chips instead of white?
It will definitely change the flavor profile but you are welcome to experiment!
Would frosting these be overkill. I was thinking of frosting with funfetti frosting.
It’s all dependant on your personal taste – These bars are quite sweet on their own, but you can really put frosting on anything 🙂
