what could I use in place of the coconut?

The coconut shreds on these cookies, are fun, because it makes it look like reindeer fur. However, if you are not a coconut fan, you may not fully enjoy these cookie, to their full potential.

These Reindeer Sugar Cookies, would also taste delicious with just some brown frosting on them. I personally prefer chocolate frosting, but you could also mix some food color, to get brown.

Reindeer Sugar Cookies Recipe

Soft, chewy sugar cookies topped with buttercream, toasted coconut, candy and chocolate covered pretzels to make a darling reindeer!

Ingredients

  • 1 cup margarine (or butter), softened*
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 4 cups flour
  • Vanilla frosting (I used this recipe )
  • Chocolate covered pretzels, cut in halves
  • Chocolate chips
  • Red Hot candies
  • 2 cups toasted coconut, coarsely chopped

Instructions

  1. Mix margarine (or butter), eggs, and sugar until well combined.
  2. Add baking powder, vanilla, baking soda, salt, and sour cream and mix well.
  3. Add flour and gently combine. If too sticky, add just a little more flour and refrigerate for about 30 minutes.
  4. Roll out dough on a floured surface and cut with a circle cookie cutter (I used a 2 3/4 in diameter circle cookie cutter).
  5. Bake at 350 degrees for about 9 minutes, making sure to not overcook them.
  6. Once cooled, spread on vanilla frosting and place halved pretzels on top for antlers, chocolate chips for eyes and a Red Hot for a nose.
  7. Sprinkle toasted coconut on remaining exposed frosting.
  8. Enjoy!

Notes

You can use butter, but the margarine makes them more soft and fluffy. The butter tends to make a flatter cookie.
