I’ve been trying to sneak more vegetables into my family’s diet and thought stuffed zucchini would be the perfect way to do it! This recipe is easy to make and was a great way to use up our extra zucchini!
Italian Stuffed Zucchini Recipe

Ingredients
- 3 medium zucchini
- 1 pound Italian sausage
- 1 cup Italian breadcrumbs
- 1 teaspoon minced garlic
- ½ cup Parmesan cheese
- 24 ounces spaghetti sauce, 1 jar
- ½ cup shredded Mozzarella cheese
Instructions
- Preheat oven to 350 degrees F.
- Trim stems from zucchini and cut in half lengthwise. Scoop out seeds and put in a large mixing bowl.
- Mix together seeds, sausage, bread crumbs, garlic and Parmesan cheese.
- Stuff zucchini with sausage mixture and place in a 9x13-inch baking dish.
- Pour spaghetti sauce over stuffed zucchini and sprinkle with mozzarella cheese.
- Cover with aluminum foil and cook for an hour, or until sausage is completely cooked through.

Sooo I basically pin every recipe y’all post. They all look SO good, this one especially! Had to say it!
This might be a dumb question but do you cook the sausage first or do you stuff the zucchini raw and it cooks in the oven? I want to try but don’t want to mess up the recipe!
Stuff the sausage in raw and it cooks during the one hour cooking time! 🙂 And no it’s not a dumb question! I wasn’t sure myself, so I asked Elyse! Thanks for stopping by!

Can I use ground beef if I don’t eat sausage (and do I need to adjust cooking time)?
Ground beef should work fine too. Choose a lean ground beef. Watch closely on the cooking time. We have only made it with pork sausage.
can this be frozen and if so do i cook it fully freeze it and then how do i reheat it?
Hi Kristie. We have never made this as a freezer meal. I think it would work as a freezer meal. Just make it and then freeze it. Just thaw and reheat until heated through.
I just made this tonight, and it was delicious! I substituted very lean ground beef for the sausage but did everything else the same. And it was great — and, most importantly, fast and easy! I’m going to try freezing a few of the left-over zucchini boats, we’ll see how that goes. Thanks for a great recipe!
can i use panko bread crumb instead of italian bread crumbs????
Panko bread crumbs will work great in this recipe too.
I just made this, baking now. I added sliced fresh mushrooms, and diced onions. It looks delicious and started to smell very good
