Healthy Pesto Grilled Cheese

Not everyone loves pesto, and that’s totally fine, but as for me, I could probably eat pesto straight out of the jar or bowl with a spoon. I love it on everything! I decided to add it to my grilled cheese sandwich earlier this week and I couldn’t get enough of it! These Healthy Pesto Grilled Cheese Sandwich are for any pesto or grilled cheese lover who might want a healthier option next time lunch rolls around.

  • 6 slices Whole Wheat Bread
  • 6 slices Mozzarella Cheese
  • 2 Avocados, pit removed, and sliced
  • 1 1/2 cups Spinach
  • 2 teaspoons Pesto Sauce (We love Classico Basil Pesto Spread)
  • 2 Tablespoons Miracle Whip or Light Mayo


  1. Spray frying pan or griddle with non stick cooking spray and preheat to medium temperature.
  2. In a bowl, mix together pesto and mayo.
  3. Spread pesto mixture onto 3 slices of bread.
  4. Top three slices of bread with cheese, sliced avocado, and spinach.
  5. Top each sandwich with remaining three slices of bread, and place onto griddle/pan.
  6. Let cook for about 3 minutes or until cheese begins to melt and bread turns golden, flip sandwich and repeat on same side.
  7. Enjoy! We love ours with tomato soup!
