My Mother-in-Law gave me this recipe right after we got married. It is our go to crock pot meal when I can’t think of anything else to make. It is so easy and this chicken can be used all kinds of ways.
It comes together in a matter of minutes, and dinner is ready later that night. It’s so easy to make and full of amazing flavor.

Healthy Meals Monday: Slow Cooker Italian Chicken Salad

Ingredients

  • 4 to 6 boneless, skinless chicken breasts
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin
  • 16 ounce bottle fat free Italian dressing

Instructions

  1. Spray your crock pot with non stick cooking spray. Put your chicken on the bottom of your crock pot.
  2. Sprinkle your chicken with the chili powder and cumin. Pour your dressing on top of the chicken.
  3. Cook on low heat for 6 to 8 hours. When it is done cooking, shred your chicken. 
  4. This chicken served on soft tortillas with sour cream and toppings is so delicious.

  1. Forget spraying the crockpot and scrubbing later! You MUST MUST MUST try the Crockpot liners, they are simply life changing! Well, maybe not life changing but they make clean up soooo much easier. They are sold in most grocery stores in by the aluminum foil and oven bags.

    And I'm making Crockpot Italian chicken on Thursday! It's on my meal plan for the week:)
