Breakfast Sausage Strata Recipe

Breakfast is our favorite meal of the day, but it just got a whole lot better with this Breakfast Sausage Strata. Also makes a delicious dinner.

A delicious breakfast recipe you will LOVE. We love this Breakfast Sausage Strata. Breakfast was already my favorite meal of the day, but it just got a whole lot better.

Full of protein, and all the goods, to help you feel full and fueled throughout your morning.

It’s easy to whip together and tastes amazing. It’s also great for breakfast for dinner, or to make ahead of time, and use as breakfast or dinner meal prep throughout the week.

the story behind breakfast sausage strata:

My husband is not a breakfast easter. It drives me crazy, because I am a big time breakfast eater, and can’t get enough of it.

However, he loves eating breakfast burritos, and other breakfast foods, not at breakfast.

I decided I was going to take the filling out of the breakfast burrito, and make a meal he couldn’t resist.

That is how this Breakfast Sausage Strata was born. It has all the flavor and fillings of a breakfast burrito, without the tortilla (but you could easily add tortilla, or scoop this into a tortilla).

This is a great recipe that can be made ahead of time, and microwaved or cooked throughout the week. Delicious and simple.

I feel him. Because there is no better breakfast meat out there. I do love sausage, but this recipe would be absolutely amazing in this recipe.

We used sausage in this recipe, but if you are looking to switch it up, here are a few other meats that would taste delicious on this grilled cheese melt:

  • ground turkey
  • turkey sausage
  • beef sausage
  • pork sausage
  • ham
  • bacon
  • turkey bacon
  • Canadian bacon

You could also make it without meat, but my husband has converted me to be a carnivore at every meal. I love the meats.

Ingredients

  • 1 pound lean turkey sausage
  • 12 English muffins (halved)
  • 2 cups shredded cheddar cheese (divided)
  • 8 eggs
  • 1 1/2 cups sour cream
  • 1 green bell pepper (chopped)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375 degrees.
  2. Heat a skillet over medium high heat. Add sausage and cook until it is browned. Drain grease.
  3. Spray a 9 X 13 pan with non stick spray.
  4. Arrange 6 English muffins, (12 halves) and put them in the bottom of the the pan.
  5. Top with half of the sausage and half of the cheese.
  6. Add another layer of the English muffins, and add the rest of the sausage.
  7. In a medium bowl whisk together the 8 eggs, sour cream, and green pepper. Sprinkle with salt and pepper to taste. Pour it over the English muffins so it covers all the bread.
  8. Add your cheese and and let it sit 10 minutes.
  9. Cover with foil and bake for 40 minutes until cooked through.

Notes

You can also make this the night before and let the eggs soak in over night. It tastes SO good!

  1. I made this strata tonight for supper. We all liked it, but have a suggestion; The English muffins make a nicer casserole if cut up into pieces. We used onions instead of peppers, just a personal preference. I put it together in the morning, then baked for supper. I almost forget the salt and pepper, since the recipe didn't say when to add it. But, I added it to the egg mixture along with 1 cup of milk. It just didn't seem right not to put milk in a strata. The strata turned out creamy and tasty, maybe just a little on the dry side. Thanks for a good recipe.

    This looks fantastic and I will be trying it tomorrow morning for DH and I. But a quick question on this. How does it taste if warmed up? Trying to come up with breakfast at work ideas that taste okay after being warmed up in the microwave.

    What a disappointment! Big time! I have made many breakfast casseroles and I have never been more sorry I didn't listen to my instincts and cooking experience. I'm 67 years old. My peers consider me a very good cook. Well, My Bad! Loved the English muffins vs traditional Pillsbury Biscuits or bread. However: For the volume of muffins in this recipe/size of casserole, I'm suggesting adding some milk, more eggs (4-6 depending on size of eggs) and 3 cups cheese. If you like spice, add some jalapeño peppers or chili peppers. Don't be afraid to use plenty of pepper and salt.
