A delicious breakfast recipe you will LOVE. We love this Breakfast Sausage Strata. Breakfast was already my favorite meal of the day, but it just got a whole lot better.
Full of protein, and all the goods, to help you feel full and fueled throughout your morning.
It’s easy to whip together and tastes amazing. It’s also great for breakfast for dinner, or to make ahead of time, and use as breakfast or dinner meal prep throughout the week.
The story behind breakfast sausage strata:
My husband is not a breakfast eater. It drives me crazy, because I am a big time breakfast eater, and can’t get enough of it.
However, he loves eating breakfast burritos, and other breakfast foods, just not at breakfast.
I decided I was going to take the filling out of the breakfast burrito, and make a meal he couldn’t resist.
That is how this Breakfast Sausage Strata was born. It has all the flavor and fillings of a breakfast burrito, without the tortilla (but you could easily add tortilla, or scoop this into a tortilla).
This is a great recipe that can be made ahead of time, and microwaved or cooked throughout the week. Delicious and simple.
What other meat would be good in this?
Have you seen the Office episode where Michael Scott burns his foot on the George Foreman Grill, because he likes to wake up to the smell of crackling bacon?
I feel him. Because there is no better breakfast meat out there. I do love sausage, but it’s doubly amazing in this recipe.
We used sausage in this recipe, but if you are looking to switch it up, here are a few other meats that would taste delicious on this grilled cheese melt:
- ground turkey
- turkey sausage
- beef sausage
- pork sausage
- ham
- bacon
- turkey bacon
- Canadian bacon
You could also make it without meat, but my husband has converted me to be a carnivore at every meal. I love the meats.

Breakfast Sausage Strata Recipe
Ingredients
- 1 pound turkey sausage, lean
- 12 English Muffins, halved
- 2 cups shredded cheddar cheese, divided
- 8 large eggs
- 1 ½ cups sour cream
- 1 green bell pepper, diced
- salt and pepper, to taste
Instructions
- Preheat oven to 375 degrees.
- Heat a skillet over medium high heat. Add sausage and cook until it is golden brown and then drain grease.
- Spray a 9 x 13 inch pan with non stick cooking spray.
- Arrange 6 English muffins (12 halves) and put them in the bottom of the pan.
- Top with half of the sausage and half of the cheese.
- Add another layer of English muffins, and then add the rest of the sausage.
- In a mixing bowl whisk together the 8 eggs, sour cream, and green pepper. Sprinkle with salt and pepper to taste. Pour egg mixture over the English muffins so it covers all the bread.
- Add the rest of the cheese and let sit for 10 minutes to the eggs can soak in.
- Cover with aluminum foil and bake for 40 minutes until cooked through.

You can assemble it the night before and bake it in the morning.
I made this strata tonight for supper. We all liked it, but have a suggestion; The English muffins make a nicer casserole if cut up into pieces. We used onions instead of peppers, just a personal preference. I put it together in the morning, then baked for supper. I almost forget the salt and pepper, since the recipe didn’t say when to add it. But, I added it to the egg mixture along with 1 cup of milk. It just didn’t seem right not to put milk in a strata. The strata turned out creamy and tasty, maybe just a little on the dry side. Thanks for a good recipe.
This looks fantastic and I will be trying it tomorrow morning for DH and I. But a quick question on this. How does it taste if warmed up? Trying to come up with breakfast at work ideas that taste okay after being warmed up in the microwave.

What a disappointment! Big time! I have made many breakfast casseroles and I have never been more sorry I didn’t listen to my instincts and cooking experience. I’m 67 years old. My peers consider me a very good cook. Well, My Bad! Loved the English muffins vs traditional Pillsbury Biscuits or bread. However: For the volume of muffins in this recipe/size of casserole, I’m suggesting adding some milk, more eggs (4-6 depending on size of eggs) and 3 cups cheese. If you like spice, add some jalapeño peppers or chili peppers. Don’t be afraid to use plenty of pepper and salt.

Hi Colleen, We baked uncovered. You could easily cover it loosely with foil at the end of cooking time to keep it from getting too brown.

Not my favorite. Felt it was too dry. Like the suggestions of adding milk. Needed some spicing up. Normally love their recipes.
How do I halve it and can I bake it in a big toaster oven?
You can halve the recipe. Just divide all the ingredients in half and follow the instructions as directed. Cook it in an 8 x 8 inch square pan. You can cook it in a toaster oven if it heats up to 350-375 degrees. We hope this helps.
Yummy! We added 2 extra eggs and 1-2 cups of milk per previous suggestions and it was right on. Also cut the english muffins into small chunks. Huge hit!
I looked for an English muffin breakfast casserole, and this was a nice starting point. I’m an “assertively flavored” guy, so I enhanced as follows. Sauteed one medium/large onion, minced 5 cloves of garlic, added herbs from my garden, along with paprika, fennel seeds and chili powder.
Turned out wonderfully, I’m thinking serves 9. What I would do in the future instead of using a generic “green pepper” is to use an Anaheim/Poblano instead.
