Ingredients
- 1 Tablespoon butter
- ¼ cup onion, diced
- 1 Tablespoon minced garlic
- 16 ounce can refried beans
- 4 ounces cream cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, diced
- tortilla chips, for serving
Instructions
- Preheat oven to 350 degrees F.

Awesome recipe! (I just bought 10 cans of refried beans at Albertson’s today because they were having a big sale.) With my little one, my third trimester was all Mexican food, all the time. I had Mexican for supper and then leftovers for the following breakfast and lunch. My husband had to go on Mex detox after Muffin was born.

Makes about 6 servings as an appetizer, not as the main dish. You can easily double or triple this to serve more or to have larger servings.
I might try layering this with quinoa and whatever else I can find to make a casserole type thingy. I’m 38 weeks pregnant, dying for Mexican food, and not wanting to leave my house!
