With our Six Sisters’ Strong 90 Day Challenge we’ve been trying to eat a little healthier. I’ve been eating so many spinach salads for lunch that I just couldn’t take it anymore.
I decided to throw together a few of my favorite foods and have now found my new favorite healthy lunch.
Topped with this delicious and super easy Lemon Avocado Dressing, this salad is sure to give you all the energy you’ll need to get through the rest of the day.
what could i use in place of the salmon?
I am not a huge salmon lover, unless cooked to perfection, and seasoned just right. If you are anything like me, you probably didn’t want to give this recipe a shot.
However, I tried it and I fell in love with the flavor. If you haven’t ever tried it before, we recommend you do. You may just change your mind.
We also recommend using tuna, shrimp, or tilapia for this salad. They would all be delicious.

This dressing is what really makes this salad delicious. If you are looking to add some flavor, we definitely recommend this dressing.
We have found that the best way to make it, is to blend all the dressing ingredients, in a blender, until you have reached desired consistancy.

Salmon Salad with Lemon Avocado Dressing
- 3 ounces cooked salmon
- 2½ cups romaine lettuce chopped
- 6 cherry tomatoes
- 1 avocado
- ⅛ cup olive oil extra virgin
- 1 Tablespoon lemon juice fresh tastes best!
- 1-2 Tablespoons water to get desired consistency
- Half the cherry tomatoes and add in a bowl with the rest of the salad ingredients.
- Place all of the ingredients for the dressing in a blender, blend until all combined and avocados completely blended.
- If consistency is too thick, continue adding water until desire consistency is reached.
- Drizzle over salad, top with croutons and sprinkle with Parmesan cheese. Enjoy!
