How To Make Breakfast Burritos:
Bacon:
- Cook the bacon: Heat a large skillet over medium-high heat. Add bacon and cook until crispy on both sides. Remove the bacon and set aside on paper towels to drain.
Hash browns:
- Cook the hash browns: Cook the hash browns in bacon grease according to package directions. Set the hash browns aside. Season them to taste with salt and pepper.
Eggs:
- Cook the eggs: whisk eggs with heavy cream and salt and pepper, to taste, in a large bowl.
- Wipe the skillet and add 2 tablespoons of butter. Once the butter is melted, pour in the eggs. Sprinkle the cheddar cheese over the eggs. Using a rubber spatula, scramble eggs until they are just cooked. Remove the eggs from the skillet and set aside.
Sausage:
- Cook the sausage: Wipe the skillet and set it over medium-high heat. Add the ground sausage and cook it, breaking down the lumps, until the sausage is cooked through.
Assemble the burritos:
- Fill the tortillas: place the hash browns, sausage, eggs, 2 slices of bacon, and avocado on each tortilla. Fold the two opposite sides over the filling, the start to roll your tortilla.
Final touch:
- Melt the remaining butter in a large skillet. Add rolled burritos and warm flour tortillas by cooking on each side until nicely golden brown.
Serve:
- Slice the burrito in half and serve.
Recipe Variations & Optional Addins
- Fresh tomatoes
- Black beans
- Red onion
- Sliced bell peppers
- Green onions
Expert Tips:
- You can spread your favorite hot salsa over tortillas for extra flavor and heat.
- For this recipe, I used pork sausage, but the turkey sausage will be great too.
- I used whole wheat tortillas for this, but you can use corn or plain tortillas
Storage, Freezing & Reheating Instructions:
Make ahead: Make the best breakfast burritos all at once and either store them in the fridge to quickly heat them up within 3-4 days, or place them in the freezer to use them for up to 3 months in freezer bags.
Reheat: To reheat the burritos, place the burrito in a damp towel and microwave it in 30-second intervals until they are heated through to your liking. Using a damp towel will keep the tortilla from drying out while reheating, as well as creating a steaming effect.
