This recipe for Lion House Banana Bread Muffins is a family favorite.
If you live in Utah, you have probably heard of the Lion House Restaurant . . . they seriously have some of the best homemade dishes I have ever tried!
I got this recipe from my mother-in-law’s friend and it’s pretty dang close to the Lion House’s banana bread recipe, but I love to make muffins with it too.
I know that there are a lot of banana bread recipes out there, but this one is my favorite because they always turn out perfectly moist!
Sometimes I top it off with a simple almond-flavored glaze- with or without it, it’s still yummy. If you have over-ripe bananas, this is a perfect way to use them up!
Ingredients for Lion House Banana Muffins:
- ½ cup butter (or margarine)
- 1 cup sugar
- 2 eggs
- 1 cup mashed bananas 3-4 bananas
- ¼ cup milk
- 1 teaspoon lemon juice
- 2 cups flour
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chopped nuts (optional – I like walnuts best!)
Optional Almond Glaze
- 2 cups powdered sugar
- 5 Tablespoons milk
- ½ teaspoon almond extract
Equipment Needed
For this recipe, you only need a few simple kitchen tools. We recommend using the following equipment:
- Mixing Bowl (Large)
- Mixing Bowl (Medium)
- Muffin Tin (Regular)
- Non-stick Cooking Spray
- Mixing Bowl (Small)

How to make Lion House Banana Muffins
- Preheat oven to 350℉.
- In a large mixing bowl, cream butter and sugar together.
- Add eggs into mixing bowl and beat. Add in mashed bananas, milk, and lemon juice.
- In a separate bowl, combine dry ingredients and then add to wet ingredients. If using, fold in nuts.
Baking Loaf:
- Bake in well-greased bread loaf pan for 1 hour at 350℉. Makes 1 loaf.
Making Muffins:
- Bake in greased muffin tins (or use baking cups) for about 20-22 minutes. This recipe will make about 16 muffins.
Making Mini Muffins:
- Bake in greased mini muffin tin (or use mini baking cups) for about 11-13 minutes. This recipe will make about 48 mini muffins.
To make optional glaze:
- Mix together powdered sugar with milk and almond extract until smooth. Drizzle on top of muffins or loaf of bread. I like to put the glaze on while the muffins are still warm so that it melts into the bread.
Storage Suggestions
- Reheating: Preheat oven to 300°F. Reheat until warm for best results. Or microwave in 30 second increments for 1 to 2 minutes.
- Counter & Refrigerator: Place rolls in an airtight container or ziplock bag. Store in the refrigerator for 3 to 4 days. Store on the counter for 1-2 days.
- Freezer: Wrap each rolls individually in foils and place in an airtight freezer bag. Store in the freezer for 1 to 2 months.
