Easy Lemon Cheesecake with Wholesome!®

As soon as spring rolls around, I am always looking for new fresh and delicious desserts.  I have been craving lemon lately, so it seemed only natural to make a lemon cheesecake!  This cheesecake is so smooth with the perfect hint of lemon!  I sweetened it with Wholesome!® Organic Blue Agave Sweetener, which has a low glycemic index so you get plenty of natural sweetness without the blood sugar spike!

Lemon Cheesecake with Wholesome! Blue Agave Sweetener

  • Crust:
  • 1 cup graham cracker crumbs
  • 2 Tablespoons brown sugar
  • 2 Tablespoons unsalted butter, melted
  • Filling:
  • 2 (8 ounce) pkg. cream cheese
  • 1/2 cup Wholesome!® Organic Blue Agave Sweetener
  • 1/2 cup sour cream
  • 3 eggs, lightly beaten
  • 2 Tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 1 teaspoon vanilla extract


  1. For the crust:.
  2. Preheat the oven to 400 degrees F.
  3. Spray an 8-inch springform pan with nonstick cooking spray.
  4. Combine graham cracker crumbs, brown sugar, and melted butter and press mixture into bottom of pan.
  5. Bake 7-10 minutes, or until golden brown.
  6. For the filling:
  7. Keep the oven at 400 degrees F.
  8. In a medium bowl combine cream cheese and agave until smooth.
  9. Blend in sour cream.
  10. Stir in beaten eggs, one third at a time.
  11. Stir in lemon juice, zest, and vanilla until well combined.
  12. Pour into baked crust and place in oven. Immediately turn heat down to 300 degrees F and bake for one hour or until cake begins to rise on the sides.
  13. Turn oven off. Open oven door and let cake sit in oven for another 30 minutes.
  14. Let cool and serve.
