Cherry Chocolate Muffins


Sometimes I try to justify eating chocolate for breakfast. I thought this was a good way to describe my mindset some mornings:


🙂 I thought it was quite fitting! These Cherry Chocolate Muffins do have some fruit in them (thank heavens), so you can feel a little less guilty about eating a few for breakfast! They are sure to please your breakfast guests (or your family, too!). Enjoy!

Cherry Chocolate Muffins:
1 box chocolate cake mix
1 teaspoon baking powder
2 tablespoons all-purpose flour
2/3 cup milk
1/3 cup vegetable oil
3 large eggs
1 cup chocolate chips (I used milk chocolate)
1-2 cups fresh (or frozen) dark sweet cherries, pitted and chopped

Preheat oven to 375 degrees.  Mix dry cake mix (don’t follow directions on the box), baking powder, flour, milk, oil, and eggs together thoroughly.  Fold in the cherries and chocolate chips (reserving a few to sprinkle on top).  Pour into lined muffin cups, filling about 2/3 full, and bake for 15-20 minutes. Makes 16-18 muffins.
