Slow Cooker Mexican Rice Recipe
This slow cooker Mexican rice is so easy to make and bursting with flavor.
Serving
Ingredients
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 ½ cups white rice, uncooked
- 1 ½ cups fat free chicken broth
- 14 ½ ounces diced tomatoes
- 15 ounces kidney beans, rinsed and drained
- ¼ cup green taco sauce
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅛ cup cilantro, chopped
- 1 Tablespoon green onions, chopped

- Place rice, broth, diced tomatoes, beans, taco sauce, oregano, onions, garlic and salt and pepper in a slow cooker. Cover and cook on low setting for 3 to 4 hours. Stir in cilantro and green onions just before serving.
