My Mom used to make chili all the time in the fall. I’m not going to lie, I hated it. Every year on Halloween, my mom would make her chili, but I hated to eat it. It was the only thing keeping me from trick or treating.
It wasn’t actually gross to me, I just wanted to be out, gathering the good stuff, and not eating soup.
Now that I have grown up a little bit and my taste buds have grown up and I want chili more than I do a Tootsie Roll, I am a chili fanatic. I still love my Mom’s Chili but I sure do like trying new chili.
This Skinny Slow Cooker White Bean Chicken Chili is so easy to make, and it only requires a few simple ingredients.
If you need a quick and simple dinner idea, this is one I highly recommend trying.
what could i replace the sour cream with?
For this recipe, we recommend using sour cream for flavor, however, if you are looking for a fat free or lower calorie option, we recommend using plain Greek yogurt. It has the same texture, similar flavor, and works just as well for topping.
You could also add more plain Greek to the soup to make it more creamy as well. It’s definitely a thinner soup, but still delicious. The plain Greek yogurt will help make it a little more creamy, and taste delicious as well.
Plus it will be filled with extra protein, and absolutely delicious.

I love slow cooker recipes. Pinning this!
I’m making this for dinner tonight!!! Yay!
Why does it ask you to divide things in the recipe?
I wondered about the dividing things in the recipe too. I didn’t see where I would need that.
I love white bean chili. I especially love lower fat and calorie versions of it. Thanks for sharing this recipe on Marvelous Mondays!
Hi! This looks wonderful! I am including it in a slow cooker recipe collection here http://mommyssweetconfessions.blogspot.com/2012/12/34-slow-cooker-soups-stews-and-chilis.html
You have to go to the original recipe to see why you need to divide the beans and the chicken broth. They forgot this step in the recipe above.
Thanks for the recipe!!!
Does the chicken need to be cooked before adding it to the slow cooker?
No, it will cook all day in the slow cooker and then shred and stir in before serving! -The Six Sisters
So where do I find the original recipe? Can someone just tell me what to do with the divided broth and beans?!
Sorry about that. We fixed it!
This was easy to make. The jalapeño gave it a little extra taste but not a lot of heat . The chicken was so tender and the beans were tasty. I had to add a little salt and pepper. I think this is lo cal, low fat and low cholesterol. I bought the cheese, sour cream and cilantro but did not use it. I am making this again tomorrow and will try it with the cheese, etc.
I searched and searched for a white bean chicken chili recipe and was finally satisfied with this one! It’s currently in the crockpot 🙂 thanks for sharing!!
I did not rinse and drain the beans. Is that OK?
You should be just fine! 🙂
I made this tonight and it was delicious! To amp it up a bit I added 2 (4.5 oz) cans of chopped green chilies and an extra jalapeno. Also, we topped it with fat free greek yogurt instead of sour cream. The tanginess is still there and it’s great if you don’t tend to have sour cream around the house. Thanks for the great recipe! Roommate and boyfriend loved it and requested that it gets made again!
What is the calorie count if recipe is followed? Please advise
Wondering if you could use northern beans instead of kidney beans
Sounds delicious! Use whatever beans your family likes!
I love this recipe although, I added a can of green chili enchilada sauce. The flavor is amazing.
Hello! I just was wondering how spicy the jalapeno makes the chili? My dad is very sensitive to extreme heat and can only handle very small amounts. If i completely elimated it would the chili be to bland? Any suggestions would be very helpful as I was planning on making this Saturday night.
You should be fine just leaving the jalapeno out all together.
what is the carb. fat , serving size , can,t wait to try. thanks for sharing
About how many chicken breasts?
3 chicken breasts should be fine.
just made this recipe, above, that was altered from it’s original and it was not very good. It came out bland and I wished I would have sauteed the onions and pepper as in it’s original form. It perhaps would be better if it was made on the stovetop instead of the crockpot. Yuck.
My family loves this rescipe. Even my very picky 7 year old is a fan. I’ve made it about 10 times. Simple and delicious!
This is our family favorite/go to chili recipe (with additions we have made over time)! Have you ever adapted it to the Instant Pot?
I’ve made this recipe several times & fine tuned it with much more flavor. I will sometimes increase the chicken to 1 pound. Adjustments I have settled on for a more flavorful chili: 2 generous teaspoons of dried oregano, 1 generous teaspoon cumin, 1/4-1/2 teaspoon of smoked paprika (sometimes I will add a little Hot Smoked Paprika in as well) – optional 1/2 can of green chiles. *Saute the onions, garlic, oregano, cumin & smoked paprika in olive oil.
