Growing up, our mom made cookies whenever it was a rainy day. Her Oatmeal Scotchies recipe was one of my absolute favorite treats.
I was short on time, so rather than making individual cookies, I made them into bars! I tweaked her original recipe so they could be made in a sheet pan and the taste brought me right back to my childhood.
These Oatmeal Butterscotch Cookie Bars are perfectly soft and chewy. My kids loved them just as much as I loved my mom’s cookies growing up.
Recipe Ingredient Notes
To make (brownie/bar name), you will need the following ingredients:
- Butter, softened
- Brown sugar
- Sugar
- Eggs
- Vanilla extract
- Cinnamon
- Salt
- Baking soda
- Flour
- Old fashioned oats
- Butterscotch chips

How to make Sheet Pan Oatmeal Butterscotch Bars
- Preheat oven to 350℉.
- In a large bowl, cream together butter, brown sugar and sugar until fluffy.
- Add eggs and vanilla and mix until combined.
- Mix in cinnamon, salt, baking soda, flour and oatmeal and mix until well combined.
- Fold in butterscotch chips.
- Spray a half baking sheet (18″x13″x1″) with nonstick cooking spray and spread dough in pan.
- Dough will be sticky, so use a rubber spatula and spread as evenly as possible.
- Bake for 20-22 minutes, or until the edges are golden brown.
- Let cool and cut into bars.
Storage Suggestions
If you manage to have any leftover Bars + Brownies, these can store well if prepped appropriately. Once they have cooled completely, here is how you can store it:
- Counter: Store bars and brownies in an airtight container at room temperature for up to 4 days. If your kitchen is particularly warm, consider refrigerating instead to prevent them from getting too soft or melty.
- Refrigerator: Place in an airtight container and refrigerate for up to 1 week. Let them come to room temperature before serving for the best texture and flavor.
- Freezer: To freeze, make sure bars and brownies are completely cooled and unfrosted. Wrap tightly in plastic wrap (or Press & Seal) and then place in a freezer-safe bag or container. For easier portioning, wrap individual squares before freezing. Don’t forget to label with the date. They’ll stay fresh in the freezer for up to 3 months.

Just curious about oats. You have old fashioned oats in this recipe. What would the difference be with “quick” oats?
Quick oats work great in this recipe too.

Can you freeze these?
These Oatmeal Butterscotch bars will freeze great in an airtight freezer container or freezer bag.
These are great. I love how they are thinner and crispier than other, similar recipes.

These will last a few days at room temperature if kept in an airtight container. They can also be refrigerated for up to 1-2 weeks or frozen in an air tight container or freezer bag for 3 months as well
I tried this recipe for the first time last night. My only qualm is that the butterscotch chips didn’t melt. I’m not sure if this is how the recipe intends or if my oven wasn’t hot enough, but I’d much prefer melted chips. Otherwise, decent bars but I won’t be making them again.
