  • 2 1/4 cups flour
  • 1/2 Tablespoon baking powder
  • 1/2 Tablespoon baking soda
  • 1/2 Tablespoon cinnamon
  • 2/3 teaspoon salt
  • 1 cup butter (softened to room temp)
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2/3 Tablespoon vanilla
  • 1 cup butterscotch chips
  • 1 cup milk chocolate chips
  • 2 cups quick oats
  • 1 cup sweetened coconut
  • 3/4 cup chopped pecans


  1. Heat oven to 350 degrees. In a bowl combine flour, baking powder, baking soda, cinnamon and salt. Set aside.
  2. In a separate large bowl beat butter until smooth, and then add in brown sugar and sugar and mix well into the butter mixture.
  3. Then add in eggs and vanilla.
  4. Then add in the flour mixture from the other bowl into the creamy mixture and stir just until combined
  5. Fold in the butterscotch and chocolate chips, oats, coconut, and pecans.
  6. Line your pan with parchment paper or a baking mat.
  7. Roll dough into 1 1/2 inch balls and place on the lined pans.
  8. Bake 9 to 11 minutes or until edges are lightly browned.
