Quinoa freaked me out at first, I’ll be honest. I have made a few similar recipes before using bread crumbs, crackers, and even corn cereal bits, but quinoa was a whole new ball game.
I decided to give this recipe a shot, and it was actually better than all those other carb infested chicken breasts.
This recipe is incredibly easy to make and comes together in a matter of minutes. You are going to love it.

Quinoa Crusted Chicken Recipe
Ingredients
- 1 egg, whisked
- 1 cup quinoa, cooked
- ⅓ cup italian bread crumbs
- ¼ cup Parmesan cheese
- 1 teaspoon garlic powder
- salt and pepper, to taste
- ½ cup flour
- 4 boneless, skinless chicken breasts
Instructions
- Preheat oven to 425 degrees.
- Spray baking pan with non-stick cooking spray.
- In a bowl, whisk the egg until fully combined.
- In a separate bowl, mix the cooked quinoa, bread crumbs, Parmesan cheese, garlic powder, salt, and pepper.
- In a third bowl, place the half cup of flour.
- Dip the chicken breast into the egg mixture, then the quinoa and Parmesan mixture, then the flour last.
- Place on greased baking sheet and bake for 20-25 minutes or until fully cooked.

This is absolutely fabulous! I am going to make them this weekend. I love anything with chicken. Great post!! Thanks for sharing.
This did not go well for me. The mixture did not want to stick to the chicken. I wound up re-dipping with egg after everything else and then just had to try to press the mixture onto the chicken. After baking, there was a lot of flour that didn’t bake into the crust. I wound up spreading butter over top to get rid of the flour taste and ultimately dipped the chicken into BBQ sauce to make it palatable! So much for a healthy meal! Any suggestions? Are you sure the order of operations is egg, quinoa mixture, flour?

I had the same thing happen! What is the secret to this recipe? Why do you add flour on top of the crust? It’s just a big floury mess! It smells so good but looks awful!
Same thing happened to me. Couldn’t get rid of flour and all the crust fell off. Didn’t enjoy at all.
I wish I head read the reviews first 😭 the quinoa mixture would not stick and the flour didnt cook. So per another suggestion I sprayed some butter on the uncooked flower and hoping for the best. 😔 I was so excited to try this, may try a variation another time? or just leave the quinoa for the side.
