  • 1 egg whisked
  • 1 cup cooked quinoa
  • 1/3 cup Italian bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup flour
  • 4 boneless skinless chicken breasts


  1. Preheat oven to 425 degrees.
  2. Spray baking pan with non-stick cooking spray.
  3. In a bowl, whisk the egg until fully combined.
  4. In a separate bowl, mix the cooked quinoa, bread crumbs, Parmesan cheese, garlic powder, salt, and pepper.
  5. In a third bowl, place the half cup of flour.
  6. Dip the chicken breast into the egg mixture, then the quinoa and Parmesan mixture, then the flour last.
  7. Place on greased baking sheet and bake for 20-23 minutes or until fully cooked.

  1. This did not go well for me. The mixture did not want to stick to the chicken. I wound up re-dipping with egg after everything else and then just had to try to press the mixture onto the chicken. After baking, there was a lot of flour that didn't bake into the crust. I wound up spreading butter over top to get rid of the flour taste and ultimately dipped the chicken into BBQ sauce to make it palatable! So much for a healthy meal! Any suggestions? Are you sure the order of operations is egg, quinoa mixture, flour?
