Mushroom Asparagus Chicken Stir Fry Recipe

I am all for easy and delicious dinners. This one just takes a couple of minutes and tastes amazing.

And the best part is, it’s healthy. You can also cook in your other favorite vegetables like carrots, peas, broccoli, or water chestnuts.

If you are looking for a simple, delicious, inexpensive meal, the whole family will love, this is definitely one to try.

It is also full of vegetables, but your kids will love the flavor so much, they won’t even care.

This is one of the only ways I can get my husband to eat vegetables, and he loads up on this dish. But I can’t blame him, it’s so good, and so easy to make.

This recipe is so versatile that you could really add any of your favorite veggies. It’s also a great way to introduce new vegetables to your kids.

Here is a few other vegetable additions that would taste amazing in this recipe:

• zucchini
• broccoli
• carrots
• squash
• bell peppers
• water chestnuts
• red onion
• green beans

You could really throw in any vegetable you love, and it would taste amazing. You could also take out any that you don’t love.

My husband also like this recipe with steak.

• Slice your asparagus into small pieces. Mine were 1 to 2 inches long, but you could even cut them shorter.

• To save myself time, I usually purchase sliced mushrooms. I also prefer the taste of fresh mushrooms over canned mushrooms.

• I like to sauce my mushrooms and asparagus with just a little bit of olive oil, to soften them up.

• You can combine all the ingredients in the pan, but I was serving guests and poured it all into a big bowl, for better presentation.

• It is the perfect light dish, that is still extremely filling. You will love this one.

This Mushroom Asparagus Chicken Stir Fry comes together in a matter of minutes and is so easy to make.

Ingredients

• ▢ 2 bundles asparagus
• ▢ ¾ cup sliced mushrooms
• ▢ 2 Tablespoon olive oil, divided
• ▢ 3 boneless, skinless chicken breasts
• ▢ ½ cup chicken broth
• ▢ 2 Tablespoon lemon juice
• ▢ 1 teaspoon lemon pepper seasoning
• ▢ dash of pepper, (we used fresh cracked)

Equipment

• Skillet

Instructions

1. Heat stove to medium-high heat.
2. Cut asparagus into 2" pieces and place in a pan or skillet.
3. Chop mushrooms and place in skillet with asparagus.
4. Saute in 1 Tablespoon of olive oil until asparagus goes soft.
5. Set aside, and keep warm.
6. Cut boneless, skinless chicken breasts. In a deep skillet combine diced chicken chunks, chicken broth, 1 Tablespoon olive oil, lemon juice, and lemon pepper.
7. Cook until the chicken is cooked all the way through and there is no pink, and the juices are almost all absorbed.
8. Add the vegetables into the pan with the chicken.
9. Cook until the chicken is a golden brown, and everything is heated through.
10. Add a dash of pepper and Enjoy!
