Our mom always made our birthday’s special growing up. We would wake up and come downstairs to a very decorated kitchen and living room with a delicious breakfast. It was always so much fun! We have a few birthdays coming up in our family and these are definitely on the menu!

Funfetti Birthday Pancakes Recipe
These delicious pancakes will make any birthday extra special!
Ingredients
- 1 cup pancake mix
- 1 cup yellow cake mix
- 2 eggs
- 1 teaspoon vanilla
- 1 cup milk
- 3 Tablespoon rainbow sprinkles
Glaze
- 2 Tablespoons butter melted
- 2 teaspoons vanilla
- 3 Tablespoons milk
- 2 ½ cups powdered sugar
Instructions
- Place all ingredients for pancakes in bowl and whisk until blended. It's okay to leave a few clumps in the batter.
- Scoop about 3/4 cup of batter onto skillet or into pan and bake like regular pancake
- It will make 8-10 pancakes.
- For the glaze, mix butter, vanilla, and milk with beaters while slowly adding in powdered sugar.
- Add powdered sugar until desired consistency is reached.
- Drizzle glaze over warm pancakes and serve.

What's the purpose of adding the cake mix? Couldn't you just add sprinkles into the pancake batter?

I'd like to try this, sounds delicious! For the pancake mix does it matter if you choose the kind that is just add water, or should it be the standard one where you need to add eggs as well?

I tried making these using different temps and milk measurements but they burn before they cook through. I've been making pancakes for years and never had his problem. Bummed because I made them for my sons birthday this morning. Not sure why they didn't turn out. >:-[

I made these with pink velvet cake mix for an adorable Hello Kitty breakfast after a birthday sleepover. So cute! I made them bow shaped. The girls loved them.

I only have a spice cake mix.. I'm sure it wouldn't taste the same but could you use it?

These were so good! I used white cake mix and cheap pancake mix. The trick to not burning them is keeping the temp around 250, however, this does increase the cooking time. I didn't use the glaze, just syrup - I normally use Nutella on my pancakes but not good on these pancakes. These are definately in our breakfast routine!
