Do you leave the skin on the chicken when putting it in the crockpot?

This looks like an amazing recipe. I cook chicken in the crockpot all the time. And who doesn't love bacon?? Put the 2 together and I'm happy. Even better, this is something my very picky kids will eat!! Thanks for posting.

Why is it necessary to cook the bacon first. It seems that it would cook after 4 hrs. in the crock pot. Is it too greasy if you don't?

Made this tonight. Overall, we liked it. The flavour does not permeate the chicken, so you really need the sauce and bacon. The sauce that was on top of the chicken pieces was good, but the rest was very watery. I did drain the pineapple. If I made this again, I think I would squeeze as much of the juice out of the pineapple. Better yet, I would pan fry the chicken, cook the sauce in a pot and crumble the bacon on top.

Anyone try freezing this before cooking? Seems like it would work as a crockpot freezer meal.
