Cinnamon Churro Chex Mix

Christmas is in full swing in our family!
We actually just had our family Christmas party a couple of days ago since Kristen was visiting in Utah from Indiana. You may have seen on Instagram the amazing pinata that our mom made for all the grandkids:

Seriously, our mom has mad talent when it comes to pinata making!
It was almost heart wrenching to watch the kids break into it after all the hours of hard work to make it! My mom is also known for making the world’s strongest pinatas so that everyone gets at least one turn to smack it . . . so not only did each grandchild get a turn, but also some of the adults. 🙂 It’s always a party at grandma’s!

My contribution to the party this year was this chex mix . . . if you love churros like I do, you are going to want to have this recipe in your life. I found the cinnamon chips at Walmart, but they can be tricky to find when it’s not the holiday season, so stock up if you can! You can also purchase cinnamon chips on Amazon.

Cinnamon Churro Chex Mix

A delicious snack that can be thrown together in minutes- chex cereal covered in melted cinnamon chips plus lots of cinnamon and sugar. It doesn't get any better than this!

  • 9 cups Chex cereal (I used corn chex)
  • 2 cups cinnamon chips
  • 6 tablespoons butter
  • 3/4 cup powdered sugar
  • 1/2 cup white sugar
  • 2 teaspoons cinnamon


  1. Dump cereal into a large bowl (the bigger, the better - this makes a ton!).
  2. Place the cinnamon chips and butter together in a medium sized bowl and microwave on high heat for 45 seconds. Remove from microwave and stir, then heat again for 20 seconds. Stir until chips are completely melted and smooth. If you need to microwave them again, just do it for 15-20 second intervals, stirring in between. You want the melted chips to be thin so you can pour it or spoon it over the cereal, not thick and clumpy (which is how they will be if you overcook them).
  3. Pour melted cinnamon chips over the cereal and mix until all the cereal pieces are evenly coated.
  4. In another separate bowl, mix together powdered sugar, white sugar, and cinnamon. Pour cinnamon/sugar mixture over the cereal, stirring the entire time, so that all pieces of cereal are evenly coated.
  5. Spread cereal on a cookie sheet lined with wax paper and let cool (or you can eat them warm because that is delicious too!).

  1. Do you really use 2 cups cinnamon chips? The Hershey's brand bag is not a full 2 cups. Both times I have tried this recipe the chips and butter are thick. The first time I thought I had done more than the 45 sec + 20 sec, but the second time I was very careful to follow instructions. Trying to figure out if the quantity is off or too much time in micro. It still tastes delicious, but it's chunks of chex, instead of single pieces, since the chips/butter won't coat the cereal. Help? Thanks!

    Is there any substitutions you can use for the cinnamon chips? These are not available in Canada. I love all your recipe's and have sent many friends to your site. If you could include substitutions in your recipes it would be much appreciated!! :)
  3. I have made these 3 times. The first batch was a total loss! I followed the recipe exactly and my chips and became grainy and clumpy. I had to toss it and start again. The second round was ok, but the ration of cinnamon chips to cereal still seemed off (too much cereal.) The third time was more of a success because I used 7 cups of cereal to the one bag of chips. I think the issue here is that in the recipe above we are directed to use the Hershey's cinnamon chips and yet I just saw this recipe demonstrated on Studio 5 and she was using different chips. I paid extra close attention to the chips since this has been a source of frustration. The color was more of a light brown whereas the Hershey's chips i used had a red/brown color. Overall, the finished product tasted...OK. I'd give it 7.5 stars out of 10. But they didn't rock my world like I was hoping.
  4. Hello ..... So after Batch #3, here is the adjustments I made to make this work. Melt the 6 tablespoons of butter on the stovetop on a low simmer flame until melted. I added one to two tbls of vegetable oil. Pour the bag of chips in stir gently until melted. Then work very quickly with big bowl of cereal nearby pouring in the thin enough to pour concoction all over. It thickens and hardens VERY quickly. Once mixed in as much as possible, then I followed the rest of the recipe as written. By the way ..... this is DELICIOUS!! So good, I had to keep trying to get it done the easiest and best way I could think of! Thank you!!
  5. I also had some issues with the chips. I had 2 bags because I had bought them on Amazon and measured out the two cups. Kinda wish I had just adjusted for the 1 bag. My mix got really thick as well and so I figured what usually makes sweets recipes better? More butter. Ended up adding maybe 4 more tablespoons of melted butter and as soon as I added the 2nd set of 2 tbs melted butter I put it straight onto the chex. I also like my sweet chex mix with more powdered sugar so I used a lot more than called for. Turned out great!
  6. What a disappointment! I read absolutely everything in the directions and suggestions in the comments. Had everything ready and followed directions carefully. I should have been more skeptical with as many people had trouble with this. A recipe that multiple people have had to try and tweak multiple times should be a HUGE red flag. It was a disaster. The "melted" chips were lumpy (never fully melted) and resembled canned dog food. The butter never incorporated into the "melted" chips. I stopped there and saved the other ingredients. Cleaning up that mess was such a pain. Scrubbed the stuck on globs, which then splashed onto my clothes. Had to do laundry, but now my shirt and shoe are stained from it. Removing my Pinterest pin so no one else can make this same mistake. Major "pinstrosity."
  7. I just made this for the first time, as a dessert following a Tex-Mex meal. I had no issues mentioned by others, but what I did differently was to melt the butter and chips separately, before stirring together. I substituted butterscotch chips for cinnamon ones (since not available) and added an extra teaspoon of ground cinnamon (to equal 1 T). VERY delicious! This will be a repeat recipe.
