Well…. starting on Jan 2nd (because I had all the left overs on Jan 1st) I have started to try and eat better. I usually do good through the year except on holidays and this December we had a lot of parties and junk. It is REALLY hard for me to pass of delicious stuff. Ha Ha. I’m excited to get back on the band wagon. This Brown Sugar Honey Salmon is one of my new favorite ways to eat salmon! Hope you like it as much as I did!
1/2 cup reduced sodium soy sauce, gluten free if desired
1/4 cup fresh pineapple juice
1 teaspoon dijon mustard
1 tablespoon olive oil
1 teaspoon freshly grated ginger
2 cloves garlic, finely minced
1 teaspoon red chili pepper flakes, if desired
In a large bowl whisk together the brown sugar, honey, soy sauce, pineapple juice, mustard, olive oil, ginger, garlic and red pepper flakes if desired. Preheat oven to 400 degree. Spray baking pan with nonstick cooking spray.
Place salmon skin side down on cookie sheet lined with foil. Brush marinade on salmon. Sprinkle with a little bit of extra brown sugar so it will carmelize.
Bake for 15-20 minutes or until salmon easily flakes with fork. Just be sure not to dry out your fish! Drizzle with extra honey before serving.
