Two of my favorite treats are brownies and cookie dough. So I figured… why not put them together? I brought them to a friends house and I told him he could take a few before we left and he took half the pan – they were THAT good! Ha Ha!
Peanut Butter Cookie Dough Brownie Bars
Two of my favorite treats are brownies and cookie dough. So I figured… why not put them together? I am so glad I did, these bars are amazing!
Serving
Ingredients
- 19.5 ounces Pillsbury Brownie Mix, 1 box
- ⅔ cup vegetable oil, (as listed on box)
- ¼ cup water, (as listed on box)
- 2 eggs, (as listed on box)
- 6 Tablespoons peanut butter, divided
- ½ cup peanut butter
- ¼ cup butter (salted), softened
- ½ cup granulated sugar
- 1 cup brown sugar
- ⅓ cup milk
- 1 Tablespoon vanilla extract
- 2 cups all purpose flour
- 2 cups peanut butter M&M's
Instructions
- Cook your brownies according to directions on the box for a 9x13-inch pan.
- Once they are out of the oven, take 3 Tablespoons of peanut butter and gently spread it over your warm brownies. Let them sit and cool.
- With an electric mixer, cream the butter and 1/2 cup peanut butter until smooth.
- Add the sugar, brown sugar, milk and vanilla, and mix until smooth. Carefully add the flour, and continue to mix at low speed until fully combined.
- Spoon the cookie dough onto the cooled brownies and spread gently into an even layer.
- Sprinkle on all of the M & M's so they are spread out across all the brownies.
- Melt the last 3 Tablespoons of peanut butter in the microwave (about 30 seconds) and drizzle over your brownies.

I think this is the best idea. Looks like doughy perfection!
Any suggestions on what to substitute for the peanut butter? I have a child with a peanut allergy.
You could easily make these into sugar cookie brownies. Omit all peanut butter and just put the dough right on top of the brownie. Add whatever topping you want and there you go! Hopefully this helps!!! Let us know how it goes!

You could use cookie butter or biscoff spread if they don’t have any traces of peanut.

How long do these keep for?
We like to keep any leftovers (and that’s not very often) in an airtight container in the fridge. They should be fine for about 3 to 4 days.
These are delicious!! My mother-in-law made them for our dessert after Sunday dinner last week, and I basically inhaled my piece and then ate a second piece right after 🙂 I took home some leftovers on Sunday, and I just barely ate another piece, on Thursday, so it’s been several days but it still tastes awesome and isn’t dry at all. I’m sure at some point I will make these myself, but for now I’m just grateful my Mother-in-law introduced me to them!! 🙂
So the cookie dough layer doesn’t get baked at all? Just want to confirm… This looks killer good!
That is right. The brownie layer gets cooked and that is all. Then add the cookie dough layer as in the directions.
Would these freeze well? Looking for some freezer meals/treats for a friend who’s about to start chemo. Thanks!!

I don’t have brown sugar. Do I have to put it in or can I substitute it for something?
You will want the brown sugar in this recipe.
Just made these bars, but the cookie dough mixture stayed crumbly. So I patted it onto the brownies. But when I cut into them the cookie part just crumbled apart . What happened, I used the correct amount of milk.
Sorry they were too crumbly. You could either add just a little more butter, or even a little more milk to make the consistency not so dry.

I’m a bit skeptical about eating rare cookie dough. We’re there any cases of stomach illness from eating these delicious looking brownies? I just wanted to make sure before trying it. Thanks
The eggs are for the brownie bottom which is cooked. The rest of the ingredients fine to eat. No problems and this recipe has been around forever!
What about the raw flour?
I was also wondering about the raw flour.
Raw flour should work fine, but you should toast raw flour in order to kill bacteria. Simply place the flour on a cookie sheet and allow it to bake for five minutes at 350 degrees. Not only will this kill bacteria, but it also creates a nutty flavor which adds a little something extra to your desired cookie recipe.
I followed the recipe exactly, and the cookie dough was too crumbly to use. I ended up adding three small additions (probably 2 TB each) of milk and more mixing with each addition to get the consistency in the picture.
