Spinach and Feta Pasta Recipe
- 8 ounces penne pasta
- 1 Tablespoon olive oil
- 1 (28 ounce) can diced tomatoes
- 3 cups baby spinach
- 1 onion finely chopped
- 5 cloves garlic minced
- 1 cup fresh mushrooms sliced
- 4 ounces feta cheese crumbled
- salt and pepper to taste
- Cook pasta according to package directions. While pasta is cooking, heat olive oil in a skillet over medium heat. Add onion, garlic and mushrooms and cook until tender. Add spinach and cook until wilted. Add tomatoes until heated through. Add drained pasta and feta. Add salt and pepper to taste. Warm all the way through and serve.
