Ingredients
8ouncespenne pasta
1Tablespoonolive oil
1(28 ounce) candiced tomatoes
3cupbaby spinach
1onion, finely chopped
5clovesgarlic, minced
1cupfresh mushrooms, sliced
4ouncesfeta cheese, crumbled
salt and pepper, to taste
Instructions
Cook pasta according to package directions. While pasta is cooking, heat olive oil in a skillet over medium heat. Add onion, garlic and mushrooms and cook until tender. Add spinach and cook until wilted. Add tomatoes until heated through. Add drained pasta and feta. Add salt and pepper to taste. Warm all the way through and serve.
