Alright… I have a winner. This really is the easiest chicken I have ever made. I was in desperate need for a meal and came up with this little number. Did I mention that it tastes delicious! You can serve it as is, or you can throw it on top of a green salad. Either way it tastes amazing!
Simple Saltine Cracker Chicken Recipe
Alright… I have a winner. This Simple Saltine Cracker Chicken really is the easiest chicken I have ever made and it's so good!
Serving
Ingredients
- 4 boneless, skinless chicken breasts
- ½ cup melted butter
- 2 cup crushed saltine crackers
- ½ cup Italian bread crumbs
Instructions
- Preheat oven to 350 degrees and line a cookie sheet with aluminum foil.
- Mix the crackers and bread crumbs together and place in a medium sized bowl. Melt the butter and place in another bowl.
- Dip the chicken in the melted butter/margarine. Coat with the crumb mixture. Place on a cookie sheet and place in the oven for about 45 minutes or until chicken is cooked all the way through.
Notes
Some of our readers have suggested dipping the chicken in a Cream of Chicken soup before dipping it in the saltine cracker coating and another adds a dash of red pepper flakes for flavor and a little kick.

Try dipping the chicken in cream of chicken soup, then in cracker/bread crumbs, and drizzleing the melted butter over the top. Bake. You can’t help but scrape up all the little bits off the pan and eat them. This is SOOOOOO delicious. We add whatever type of seasoning to the bread/cracker crumbs.
Made this tonight & it was very yummy!! The only thing I’ll do differently next time is bake the chicken on a wire rack, so the that bottom doesn’t get soggy. Thanks for another great recipe! 🙂
I made this earlier this week and it was delicious!! I’m always looking for easy to make chicken recipes that I can reuse in different ways for my lunch at work, and this is the best one I’ve found so far. I added crushed red pepper flakes to give it a bit of heat and it was so good!! Definitely using this one again
