Mini Apple Spice Cakes Recipe
Ingredients
- 1¼ cups vegetable oil
- 2 cups sugar
- 3 eggs
- 3 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon cloves
- ½ teaspoon nutmeg
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3¼ cups chopped apples, peeled and cored (I used honeycrisp apples)
- 1 teaspoon vanilla
Glaze
- ½ cup butter
- ⅓ cup brown sugar
- ¾ cup sugar
- 2 teaspoons vanilla
- 4 Tablespoons heavy cream
- 2 Tablespoons powdered sugar, topping

Instructions
- Preheat oven to 300 degrees.
- Generously grease and flour 12 mini bundt pan cups or large muffin cups.
- Combine oil and sugar in a large bowl and beat with a wire whisk until well blended.
- Add eggs one at a time, beating after each egg.
- In another bowl sift together flour, cinnamon, cloves, nutmeg, baking soda and salt.
- Add flour mixture to the egg mixture and blend well.
- Then add in the chopped apples and vanilla and stir until blended in.
- Pour batter into the well greased and floured pans. Bake for 40 minutes. They should be very golden brown and toothpick comes out clean.
- Remove from oven and let cool in the pans for about 10 minutes before removing onto a wire rack to cool.
- During the last 10 minutes of baking time make the glaze. Melt the butter in a saucepan and then stir in sugars.
- Add vanilla and cream stirring well. Bring to a boil, reduce heat and simmer 4 minutes. Remove from heat. Pour glaze over warm cakes. Sprinkle with powdered sugar.

I’m making these for Thanksgiving but am really concerned about the baking time. All of the other recipes I see for the mini bundt cakes call for a much shorter baking time??
I used the mini bundt pan tin which is a little larger than the muffin cup tin. If you are nervous about it being overcooked, reduce the cooking time and check it. If the toothpick inserted comes out clean and they are set, you will be fine. If it needs more cooking time, then continue on for a few more minutes. Best of luck!
Can these be made a day ahead?
Yes, these can be made a day ahead.
If you did make these ahead of time, would you wait until the day of serving to put the glaze on? Also, do these need to be refrigerated?
I’m probably late to the party! 🙂 Either will work. But glazing on the day you serve it would be best. They are fine to be left out for a few hours during your dinner and dessert, but I would store leftovers in a covered container.
I have a mini bundt pan that is 4” wide and one that is 2” wide. Which size is closest to the size you used?

You can use regular sized muffin tins (cupcake tins) for this recipe.
How small should the apples be after chopping? Thanks
Just diced up pretty small. The cakes aren’t that big so diced apple chunks help in the small cakes.
Just made this and time is almost done. I had a lot of batter left and I made 6 muffins. Waiting to get the 12 mini bundts out. They are overflowing. I double-checked the recipe to see what I did wrong. Ugh. I filled them to the top because of so much batter left over. Hopefully, they come out okay. I love your recipes so I was upset with this one. Love the one bowl chocolate cake. It’s my go to all the time.
