Lemon Poppy Seed Muffins Recipe {WITH TRUVIA® BAKING BLEND}
These muffins are delicious AND you can enjoy without the guilt!
Serving people
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup butter (unsalted), at room temperature
- 1 teaspoon lemon zest
- ½ cup milk
- ⅓ cup Truvia sweetener
- 2 large eggs
- 2 teaspoons poppy seeds
Instructions
- Preheat oven to 375 degrees. Place 12 cupcake liners in a 12-cup muffin tin. Set aside.
- In a large bowl, cream together butter, lemon zest, milk and Truvia until light and fluffy. Beat in eggs, one at a time. Stir in poppy seeds.
- Mix in flour, baking powder and salt until just combined, making sure to not over-mix the batter. Divide the batter evenly into the muffin tins and sprinkle with additional Truvia.
- Bake for 25 minutes or until golden brown.

Looks delicious…going to have to make these soon. I’m alread a fan of Truvia, but haven’t used the baking blend.
These look delicious (but when do you add the milk?)! I’m going to make these as a loaf (I don’t have a muffin tin here in Argentina, on the mission field)… I’m sure the baking time will have to be increased a little. I might even use orange peel and substitute orange juice for the milk!

Just add it with the flour, baking soda,and salt. Sorry about that. We’ll fix that on the recipe. Best of luck making it in the loaf pan. How exciting to be serving in Argentina! 🙂 -The Six Sisters
