Ingredients
2cupsall-purpose flour
2teaspoonsbaking powder
¼teaspoonsalt
½cupbutter (unsalted), at room temperature
1teaspoonlemon zest
½cupmilk
⅓cupTruvia sweetener
2large eggs
2teaspoonspoppy seeds
Instructions
Preheat oven to 375 degrees. Place 12 cupcake liners in a 12-cup muffin tin. Set aside.
In a large bowl, cream together butter, lemon zest, milk and Truvia until light and fluffy. Beat in eggs, one at a time. Stir in poppy seeds.
Mix in flour, baking powder and salt until just combined, making sure to not over-mix the batter. Divide the batter evenly into the muffin tins and sprinkle with additional Truvia.
