Anything made from a Funfetti Cake Mix is my favorite! My little girls loved all the sprinkles in these Funfetti Cake Batter Cookies– you could even see the sprinkles on the bottom of the cookie!

To make Funfetti Cake Batter Cookies, you will need the following ingredients:
- Funfetti Cake Mix
- Baking Powder
- Eggs
- Vegetable Oil
- Vanilla
- Sprinkles

For this recipe, you only need a few simple kitchen tools. We recommend using the following equipment:


How to make Funfetti Cake Batter Cookies
- Preheat oven to 350 ℉.
- In a large bowl, mix together the cake mix and baking powder.
- In a small bowl, mix together the eggs, oil and vanilla.
- Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet.
- Bake for 8 to 10 minutes. Allow to cool for about 5 minutes on the cookie sheet before transferring to cooling rack
- They will be very soft at first but will harden as they cool even more.
NOTE: If you want your cookies to have extra sprinkles, roll the dough balls in sprinkles before putting them on the pan.
Storage Suggestions
If you manage to not eat the whole tray of cookies immediately, these Funfetti Cake Batter Cookies store well. Once cookies have completely cooled, here is how you can store them:
- Counter: Store in an airtight container in a single layer for up to 4 days at room temperature. If you want to try and get the cookies to last even longer without becoming crumbly cookies, add a slice of bread into the container of cookies. The bread will give the cookies something to draw moisture from.
- Refrigerator: Store in an airtight container in a single layer for up to 7 days in a refrigerator.
- Freezer: You can freeze precooked cookie dough for cookies later. Just roll out and freeze for 30 minutes, and then transfer to an airtight, freezer safe bag for up to 3 months. To store cooked cookies, let them cool completely before you put them in a freezer-safe bag for up to 3 months.

Would subbing in unsweetened applesauce work for the oil?
We haven’t tried it, but sounds like a healthy version.
Mine are burning on the bottom but the rest of the cookie is not done yet. Suggestions? I only did them for 7 min and they are still burning. So bummed 🙁
I tried to use the unsweetened applesauce and I did not like it. It make the cookies rise and made them more spongy. I really preferred the ones with just oil. I even tried half oil half applesauce and it was better but still not as good.

Just buy the size they have at your store. It will be fine. Cake mix sizes have changed so much in the last few years.
I have confetti angel food cake mix & a confetti cake mix. Both are Betty Crocker. Which do I use?
Use the confetti cake mix!
Unfortunately the size of the cake mix has changed. It is now 15 .25 oz. In order for this to work, you need to buy 2 boxes of cake mix. You need to add an additional 1/2 cup plus 2 TBLS. cake mix. Just thought you should know. And they were delicious!!
I only have white cake mix – will it turn out the same as Funfetti if I just add 1 cup of rainbow sprinkles? Making for a bake sale tomorrow – kids buy anything that have sprinkles on it!! 🙂
