My Mother-in-Law came to help before I had my baby and she cooked up this meal. Sometimes I feel like a lot of my slow cooker meals taste the same but this was so different! It is so easy to throw together and it is delicious!!!
SLOW COOKER CHICKEN TORTELLINI RECIPE

Serving people
Ingredients
- 3-4 boneless, skinless chicken breasts, (cooked and cubed)
- 1 package frozen 3 cheese tortellini
- 26 ounces pasta sauce, (I like Ragu)
- 15 ounces canned diced tomatoes
- 15 ounces low fat ricotta cheese
- 2 Tablespoons butter
- 2 cups fresh spinach
- 1 cup sliced fresh mushrooms
- ½ onion, (diced)
- ½ can olives, (sliced)
Equipment
Instructions
- Saute the spinach, mushrooms and onion in the butter. Add the cooked cubed chicken until warmed through.
- In a separate bowl mix together the spaghetti sauce, the canned tomatoes and ricotta cheese.
- In a greased crock pot place your tortellini, veggie and chicken mixture, spaghetti sauce mixture, and olives. Stir all together before placing the lid on top.
- Cook on Low 4 to 6 hours.
- Sprinkle Parmesan cheese on top before serving!

Looks yummy! I’d be afraid that the pasta would get too mushy cooking that long? But it doesn’t? YUM!
No… Surprisingly it doesn’t. The pasta turns out perfect!
If you buy the frozen tortellini, do you boil it first?
Nope – just throw it in frozen!
How big a bag of frozen tortellini? Our store has a few different sizes.

This recipe is currently in my crockpot as I type this! So excited to see how it turns out. I’ve never filled my pot that high before so I hope nothing goes wrong.
I must also add that I absolutely love the recipes that you and your sisters post. Each time I make them I am so impressed and happy with how they turn out. I tell all my friends who get crockpots to check out your site! My new favorite is the Crock Pot Hawaiian BBQ Chicken. Not only is it easy (3 ingredients!) but it is delicious! My boyfriend even called it “excellent” when he tried some!

Do you cook the chicken and then throw it in the crockpot for 4-6 hrs? It doesn’t dry out?
Yes, cook the chicken first and then cut it up. It doesn’t dry out.
Mushy pasta and dry chicken. Pretty flavorless. You have so many great recipes on this site, but this is not one of them.
Followed the directions and the result was way too dense. Added a little broth tooB. Don’t know what went wrong. Don’t think I’ll try the recipe again.
