Over the past few months, I have been trying to eat healthier to get back in shape from having a baby.  Man, is it hard for me!  I love eating treats and have never been a fan of vegetables.  I’ve been trying to incorporate vegetables into most of our meals and have been trying a lot of different variations of them so I don’t feel like I’m eating the same thing all the time.

These green beans make a delicious and healthy side dish, so I don’t even mind eating my veggies!  Even my kids loved these green beans!

These Garlic Parmesan Green Beans make a healthy and delicious side dish!

  • 1-2 pounds green beans
  • 3 Tablespoons olive oil
  • 4 Tablespoons minced garlic
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 2 Tablespoons shredded parmesan cheese


  1. Trim the ends off the green beans.
  2. In a large pot, boil green beans for 5 minutes, drain through a strainer.
  3. In the same pan over medium heat, add olive oil, garlic and pepper flakes for 1 minute or until garlic turns golden brown.
  4. Stir in the green beans and cook for 5 more minutes.
  5. Season with salt and pepper.
  6. Top with shredded parmesan cheese.
