We can’t resist a yummy cookie that has peanut butter and chocolate! These cookies are soft and moist. They look complicated, but are actually so easy to make. These are the perfect cookie for your cookie exchange!

DIPPED PEANUT BUTTER SANDWICH COOKIES RECIPE
These cookies are soft and moist. They look complicated, but are actually so easy to make.

Ingredients
Peanut Butter Cookies:
- 1 cup margarine, (Softened at room temp)
- 1 cup brown sugar
- 1 cup white granulated sugar
- 1 cup peanut butter
- 2 eggs
- 2½ cups flour
- 1½ teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
Peanut Butter Filling:
- ¾ cup peanut butter
- ¼ cup powdered sugar
- 2 teaspoons butter, melted
- 1 teaspoon milk
Chocolate Dip:
- 1 cup milk chocolate chips
- 4 teaspoons vegetable oil
Instructions
Peanut Butter Cookies:
- In a mixing bowl combine softened margarine, eggs, brown sugar, white sugar, and peanut butter. Then stir in flour, baking soda, baking powder, and salt. Roll into 1 inch balls and place on ungreased baking sheet. Make criss cross marks with a fork. Bake at 350 degrees for 8 to 9 minutes. Cool completely.
Peanut Butter Filling:
- Spread 1 tablespoon filling on the flat side of a cookie and then top with another cookie to make a sandwich.
Chocolate Dip:
- Melt chocolate chips and oil in a microwave safe bowl for about 1 minute. Stir until melted and smooth. Dip cookies halfway into the chocolate. Let the excess chocolate drip off. Place onto a cookie sheet lined with waxed paper. Drizzle with remaining chocolate. Refrigerate to set.

I made these cookies using everything and including the milk chocolate and the white chocolate chips as well . I dipped one end in the milk chocolate and I dipped the other end in the white chocolate used the white chocolate to drizzle over the milk chocolate and the milk chocolate to drizzle over the white chocolate end .
These were some totally awesome cookies and everyone just loved them . I have been asked to make them again for a Thanksgiving party for my husband at his job .
Can you substitute the margarine for butter?
Yes, butter will be fine too.
Is the filling supposed to be so thick and dry? Or should I add more milk or butter. 2 tsp. of butter seems like nothing.
The filling is thick, like a thick frosting. It is not runny.
I love this recipe. I would like to make ahead for Christmas. Can I make the cookie part now and freeze it Then in mid December finish them up by putting the filling on and then then finishing with the chocolate ?
